BBQ Sauce, Piedmont (Lexington Style)

This traditional Southern barbecue sauce has the tangy flavor of the vinegar, a little heat and a little sweet. It’s a thin sauce that is perfect for mixing into pulled pork as soon as it’s shredded. It helps keep the meat moist before it hits the plate or the bun.

Ingredients

  • 1 1/2 cup cider vinegar
  • 1/2 cup ketchup
  • 1/2 cup water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon red pepper flakes

Directions

  1. Simply cook vinegar, ketchup, water, sugar, salt, and pepper flakes. That’s it. There isn’t much else to it, but the simplicity is what makes it great. You’re using sauce to help your meats shine and not to hide their richness from your palate.
  2. Remove sauce from heat and let cool completely (about 30 minutes) before using. To give the flavors a chance to really combine, make the sauce a day ahead of time.
  3. Store the sauce in an air tight container in the refrigerator for up to one week after preparation. Warm the sauce slightly in microwave (about 30 seconds or so) before serving.
