Directions

  1. Soak beans (overnight if possible) in a large bowl with at least 2 to 3 inches of water covering the beans.
  2. When ready to can, pour beans and their soaking water into a pot and bring to a boil (you may need to add more water to keep the beans covered by about 2 inches).
  3. They will need to simmer for about 25 to 30 minutes to start to soften.
  4. NOTE: The beans should not be cooked fully when they go into the jars. If you cooked them fully before pressure canning, your finished product would be total mush.
  5. Fill jars with the prepared beans. You want to add enough beans so that they come up about 2/3 of the way up the jar. Then cover the beans with cooking liquid, leaving 1 inch of headspace.
  6. Ideally, you’ll have about an inch of water above the bean level. Don’t skimp on the water because the beans are going to continue to cook in the jars and so will need additional liquid in order to soften fully.
  7. Put jars into pressure canner (with a glug of vinegar to keep the jars clean).
  8. Processing at 10 pounds:
  9. Pints for 75 minutes
  10. Quarts for 90 minutes
