Ingredients
- 2 lbs. Dried pinto beans
- 3/4 tsp Salt
- 1 tsp Garlic powder
- 1/2 tsp Ancho chili powder
- 1/2 tsp cumin
- 5 Pint jars with lids and rings
Directions
Pick through beans removing any foreign debris
- Soak beans overnight in a large bowl with plenty of water
In the morning, drain and rinse the beans
- Put the beans in a large pot covered with water (about 2 inches above the beans)
Add spices and bring to a boil.
- Stir occasionally and watch constantly. They LOVE TO BOIL OVER
Once they reach a boil, turn off the heat.
- Ladle hot beans into jars leaving 1 inch headspace
- Top up with cooking broth but maintain 1 inch headspace
- Place lids and rings
- Process:
- Pints - 1 hour 15 minutes
- Quarts - 1 hour 30 minutes
Notes
3/4 pound of dries beans equals about 1 quart jar or 2 pint jars
