Bologna, Pickled, Mom's

Ingredients

  • 2 1/2 cups Water
  • 1 3/4 cups white vinegar
  • 2 tablespoons Sugar
  • 1 1/2 teaspoon Salt
  • 1 tablespoons Pickling Spice
  • 3/4 teaspoon Allspice
  • 3/4 teaspoon Crushed Red Pepper
  • 1 tablespoon Black Peppercorns
  • 1 Onion Sliced (I leave this out)
  • 3 – 4 Jalapenos Sliced Lengthwise
  • 1 1/2 pounds Ring Bologna
  • try adding…
  • bay leaves
  • mustard seeds
  • yellow curry

Directions

  1. Put bologna, onion and jalapenos in a 1 gallon wide mouth jar. Bring all brine ingredients to a boil then pour over bologna in jar. Refrigerate 3 to 4 days and enjoy!
