Brunswick Stew

A hearty Southern stew loaded with pulled chicken and pork, corn, lima beans, and a smoky tomato base.
Ingredients
- 2 cups shredded cooked chicken
- 2 cups shredded cooked pork (or barbecue pork)
- 1 can (28 oz) crushed tomatoes
- 2 cups chicken broth
- 1 cup frozen lima beans
- 1 1/2 cups frozen corn kernels
- 1 onion, chopped
- 2 medium potatoes, diced
- 1/2 cup barbecue sauce
- 2 tablespoons Worcestershire sauce
- 1 tablespoon hot sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Directions
- In a large pot, combine the onion, potatoes, crushed tomatoes, and chicken broth; bring to a boil, then simmer 15 minutes.
Add the chicken, pork, lima beans, and corn.
- Stir in the barbecue sauce, Worcestershire, hot sauce, salt, and pepper.
- Simmer, stirring occasionally, for 40 to 45 minutes, until thick and the vegetables are tender.
- Adjust seasoning and serve hot with cornbread.
