A hearty Southern stew loaded with pulled chicken and pork, corn, lima beans, and a smoky tomato base.

Ingredients

  • 2 cups shredded cooked chicken
  • 2 cups shredded cooked pork (or barbecue pork)
  • 1 can (28 oz) crushed tomatoes
  • 2 cups chicken broth
  • 1 cup frozen lima beans
  • 1 1/2 cups frozen corn kernels
  • 1 onion, chopped
  • 2 medium potatoes, diced
  • 1/2 cup barbecue sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon hot sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

  1. In a large pot, combine the onion, potatoes, crushed tomatoes, and chicken broth; bring to a boil, then simmer 15 minutes.

Add the chicken, pork, lima beans, and corn.

  1. Stir in the barbecue sauce, Worcestershire, hot sauce, salt, and pepper.
  2. Simmer, stirring occasionally, for 40 to 45 minutes, until thick and the vegetables are tender.
  3. Adjust seasoning and serve hot with cornbread.
