Cheese Brine, Saturated
⚠ **UNTESTED as written** -- I brine cheese, but I have never written my brine down as a formula and I am not going to reverse-engineer one from memory and present it as a recipe. This is the standard formulation with the reasoning attached. 🔴 **The single most damaging mistake in home cheesemaking is a plain salt brine**, and it is worth understanding why before you make one. Salt water and cheese are not in equilibrium. Calcium runs *out* of the cheese and into a calcium-free brine, down the concentration gradient, and the surface of the wheel loses the cross-links holding it together. It goes slippery, then soft, then to mush -- in about a week, on a perfectly good cheese, and it looks exactly like spoilage. That is not a failure you can salt your way out of. **The fix is in the brine, not the cheese:** add calcium so the gradient is not one-way, and acidify so the brine is not far more alkaline than the cheese sitting in it. A brine is also the **aging environment** for anything stored in it. Whatever is in the liquid is in equilibrium with the cheese, permanently -- so its chemistry decides the outcome for a feta far more than the make did.

SATURATED BRINE — for salting a wheel
- 1 gallon water
- 2 1/2 to 3 lb (about 5 cups) pickling or non-iodised salt — enough that a little will not dissolve
- 1 Tbsp calcium chloride, 32% solution
- 1 tsp white vinegar
FOR A STORAGE BRINE INSTEAD — feta and the brined cheeses
- 1 gallon water
- 10 to 11 oz salt (about 1 1/4 cups) for roughly 7-8%
- 1 Tbsp calcium chloride, 32% solution
- 1 tsp white vinegar

- Dissolve the salt in warm water, then keep adding until it stops dissolving. ⭐ That is what “saturated” means and it is self-indicating — when a little salt sits on the bottom and will not go in however long you stir, the solution is saturated and you cannot over-salt it. Around 26% by weight at room temperature, which is roughly the 2 1/2 to 3 lb above.
- Use pickling or plain non-iodised salt. Iodised salt can inhibit the surface flora you may be relying on, and anti-caking agents cloud the brine and make it hard to judge.
- Add the calcium chloride. 🔴 This is the step that is not optional. Without it the brine leaches calcium out of the rind and the surface of the cheese turns to mush. One tablespoon of 32% solution per gallon.
- Add the vinegar. A fresh brine sits near neutral; a cheese going into it is around pH 5. Acidifying the brine toward the cheese’s own pH stops the surface being chemically stripped. A teaspoon per gallon gets you most of the way; if you have a meter, aim for the brine to be close to the cheese.
- Chill it to cave temperature before you use it — 50 to 55 °F / 10 to 13 °C. ⚠ Warm brine softens a rind. Brining a wheel in room-temperature liquid is a common cause of a slimy, over-soft surface that gets blamed on the make.
- Brining time: roughly 2 to 3 hours per pound for a firm wheel, considerably longer for an alpine or a grating cheese. Flip the wheel halfway and salt the exposed face — 🔴 a floating wheel’s top face is out of the brine and gets no salt at all, which is how you end up with a cheese that is correctly salted at the bottom and bland at the top.
- Look after it and it lasts for years. Skim anything floating, keep it cold and covered, and top the salt back up to saturation after each use — a wheel takes salt out and puts water in, so an unmaintained brine gets weaker every time. Discard it if it goes ropy, slimy, cloudy in a way that does not settle, or smells of yeast.

Where this recipe came from — and what it isn’t 🔴 UNTESTED as a written formula. The proportions are the standard ones and the reasoning is the part worth having. ⚠ This is not a curing brine — there is no nitrite in it and it is not a substitute for one in any meat recipe.
Why calcium chloride is the whole point Calcium is divalent: one ion binds two protein sites and staples the casein network together. A cheese sitting in calcium-free salt water loses that calcium by simple diffusion, and the network at the surface comes apart. Adding calcium to the brine removes the gradient. It is the same chemistry that governs whether a cheese melts, applied at the rind rather than in the pan.
Saturated versus storage strength Saturated (~26%) is for salting a cheese — a few hours to a day, then the cheese comes out and goes to the cave. 7-8% is for storing one — feta and the brined cheeses live in it for months. ⚠ Using a saturated brine for storage gives you an inedibly salty cheese; using a storage brine to salt a wheel gives you an under-salted one that over-ripens, because salt is one of the two brakes on ripening.
A note on strength by fruit and by cheese Related brines in this collection use different numbers for good reasons: olives want about 10% of the water for storage, because below that pectin-degrading enzymes turn them to mush within weeks. Green olives being fermented want salt at at least 10% of the water used. Different food, different failure mode, different number — do not carry a brine strength across from one to another.
Sourcing and gear Calcium chloride is sold as a 32% solution by every cheesemaking supplier and keeps indefinitely. A food-grade bucket with a lid is a better brining vessel than a stockpot, because the wheel needs room to float and be flipped.
