⚠ **UNTESTED.** A briefing. ⭐⭐ **Colby is the most instructive cheese in this family, and almost nobody knows why.** It looks like cheddar. It is coloured like cheddar. It is sold beside cheddar, often as a cheaper cheddar. And **it is not a cheddar at all** — it is made by *this* family's method: **the curd is washed.** 🔴 **Which is the cleanest possible demonstration that the wash defines the family, not the shape or the colour or the shelf it sits on.** Everything you can see about a Colby says cheddar; everything about how it eats — softer, moister, milder, springier, and it does not sharpen with age the way a cheddar does — comes from twenty minutes in the vat. ⚠ **And it is washed with COLD water**, which is the twist. A gouda's hot wash dilutes lactose *and* cooks the curd. It looks like cheddar. It is coloured like cheddar. It is sold beside cheddar, often as a cheaper cheddar. And it is not a cheddar at all — it is made by this family’s method: the curd is washed.

🔴 Which is the cleanest possible demonstration that the wash defines the family, not the shape or the colour or the shelf it sits on. Everything you can see about a Colby says cheddar; everything about how it eats — softer, moister, milder, springier, and it does not sharpen with age the way a cheddar does — comes from twenty minutes in the vat.

And it is washed with COLD water, which is the twist. A gouda’s hot wash dilutes lactose and cooks the curd. Colby’s cold wash dilutes the lactose and drops the temperature, so the curd contracts less and holds more moisture. Higher moisture and higher pH together — which is why Colby is soft and mild and why it does not keep like a cheddar.

It was developed in Colby, Wisconsin, in 1885, by Joseph Steinwand, in his father’s cheese factory — and it is one of the few genuinely American cheese styles with a date and a name attached.

Ingredients

  • 2 gallons whole milk (not ultra-pasteurised)
  • 1/4 tsp mesophilic culture
  • 1/2 tsp calcium chloride solution, if the milk is shop-bought
  • 1/4 tsp annatto, diluted, if you want the orange colour
  • 1/2 tsp liquid rennet, single strength, diluted in 1/4 cup cool unchlorinated water
  • 2 quarts COLD water, for the wash — see the directions
  • Saturated brine, calcium-adjusted — see Cheese Brine, Saturated
  • Cheese wax, or a vacuum bag

  1. Warm to 86 F / 30 C, mesophilic culture, annatto now if you want it orange — which is a matter of habit rather than flavour — and ripen 45 minutes.

Rennet at a flocculation multiplier of 3, cut to 1/4-3/8 inch — finer than a gouda.

  1. Stir gently while raising to 100-102 F / 38-39 C over about 30 minutes, exactly as you would for a cheddar. So far this IS a cheddar make.
  2. 🔴 NOW THE COLD WASH, and this is where it stops being a cheddar. Drain off about half the whey and replace it with cold water — enough to bring the vat down to about 80 F / 27 C. Stir for 15-20 minutes at that temperature.
  3. Two things happen at once and both matter. The lactose is diluted, so the cheese finishes higher than a cheddar. And the curd is chilled, so it contracts less and keeps more water. A gouda’s hot wash raises the temperature; Colby’s drops it. Same idea, opposite direction, different cheese.

⚠ Drain under the whey

  1. Let the curd settle into a mass at the bottom of the pot with the whey still over it, press it down with your hands or a plate, and only then gather it. Working the curd under liquid is how you keep air out of it — and air trapped between curd pieces becomes a mechanical opening, a slit or crack in the finished paste that has nothing to do with gas and everything to do with sloppy draining.
  2. Press moderately: ~5 PSI for 30 minutes, flip and redress; ~15 PSI for 6-12 hours. Lighter than a cheddar — you are protecting the moisture.

Brine a few hours per pound, dry, then wax or bag.

  1. Age at 50-55 F for 1 to 3 months.Do not try to age it like a cheddar. A Colby held for a year does not become a fine old Colby; it dries out and cracks. The moisture that makes it good is also what limits it, and that trade is the cheese.

Notes

Where this recipe came from — and what it isn’t 🔴 UNTESTED. “Colby” is a generic name with a US standard of identity, and free to use.

🔴 What the wash actually does Your starter eats lactose and makes lactic acid. Left alone it keeps eating until it runs out or the acid stops it, and a cheddar ends up around pH 5.0–5.2.

Washing interrupts that. You draw off part of the whey and replace it with water, which dilutes the lactose still dissolved among the curds. Less sugar means less acid, and the cheese finishes higher — around pH 5.2–5.4.

Two-tenths of a pH point is the entire family. Higher pH leaves more calcium bound into the casein network, and bound calcium is what makes a gouda bend where a cheddar snaps. It is also why these are the best melters in the section.

And the water goes in HOT, so it raises the vat temperature and cooks the curd in the same operation. One step, two outcomes — which is the neatest piece of design in the whole craft.

⭐⭐ The point of putting this recipe in the collection Colby exists in this wing to make one argument: families are defined by what you DO, not by what the cheese looks like. A Colby and a cheddar are visually and commercially interchangeable and are made by two different methods — and everything that distinguishes them on the tongue traces back to a wash step. ⭐ If you make a cheddar and a Colby a week apart you will learn more about this section’s taxonomy than from any amount of reading, including mine.

Cold wash versus hot wash Gouda: hot water, raises the vat, cooks the curd, drier cheese. Colby: cold water, drops the vat, curd contracts less, wetter cheese. Both dilute lactose and both raise the final pH; they differ entirely in what they do to moisture. ⚠ A recipe that just says “wash the curd” without specifying the temperature is telling you half of it.
