Cheese, Grana-Style
⚠ **UNTESTED as this style.** I have made [a Parmesan-style wheel](/recipes/cheese-parmesan-style/); I have not made a grana as its own thing. A briefing. *Grana* means **grain**, and it is a description of the fracture rather than a place. At the bench this make is the Parmesan above it, and if that were the whole story this would not be a separate recipe. 🔴 **It is a separate recipe because of one bacterium.** *Clostridium tyrobutyricum* gets into milk from silage, survives the cook, and eats lactate in a ripening wheel -- producing gas months in, splitting the cheese from the inside. It is called **late blowing**, it is the failure that ruins a two-year cheese in its second year, and Grana Padano and Parmigiano-Reggiano solve it in **completely different places**. ⭐⭐ **One solves it in the vat. The other solves it in the barnyard, a year earlier.** That is the most instructive disagreement in this whole section, and neither side is wrong.

- 3/4 tsp liquid rennet, single strength, diluted in 1/4 cup cool unchlorinated water

- Follow Cheese, Parmesan-Style exactly — thermophilic culture at 90-94 F, floc multiplier 2-2.5, cut to rice grain, fore-work, cook to 125-132 F / 52-56 C, hold and stir, settle, gather, press moderately for a long time, brine, age dry.
- ⭐ One real difference at the bench: skim BOTH milkings, lightly. Grana Padano takes milk from both of the day’s milkings, each partly skimmed, and works to a fat-to-casein ratio in the vat between 0.80 and 1.05 — roughly 2.6% fat in the vat against Parmigiano’s 2.8%. Parmigiano skims one milking only, generally the evening’s. Slightly leaner in, slightly drier and milder out.
- 🔴 And one difference you cannot copy, which is the point of the recipe. A Grana Padano dairy is permitted to add egg-white lysozyme to the vat against late blowing. You are not going to do that — which puts you on Parmigiano’s side of the argument by default, and means your only defence is the milk you started with. Read the notes before you buy it.
- Age from 9 months. Grana Padano is inspected for quality at nine months, where Parmigiano-Reggiano is inspected at the end of the twelfth. Younger, milder, and a genuinely different intention rather than a lesser one.

Where this recipe came from — and what it is not 🔴 UNTESTED. 🔴 This is not Grana Padano. Sources are the Grana Padano consortium’s own published comparison with Parmigiano-Reggiano, and the Parmigiano-Reggiano PDO product specification.
🔴 Thermophilic, not mesophilic — and the recipe will not warn you Every cheese on this page cooks the curd well past the temperature at which a mesophilic culture dies. Put the wrong one in and you kill your own starter partway through the cook; acidification simply stops, and nothing visible happens at the time. Use Cheese Culture, Thermophilic Mother or a direct-set thermophilic packet.
⭐⭐ Two protected names, one bacterium, opposite answers Grana Padano permits silage in cattle feed — mainly ensiled maize, which is cheaper, available year-round and is exactly where Clostridium tyrobutyricum comes from. Having accepted the risk at the farm, the specification handles it at the vat: lysozyme, a protein from hens’ egg white, additive E1105, permitted to a maximum of 2.5 g per 100 kg, written into the specification in 1991. It lyses the clostridial cells. It works.
Parmigiano-Reggiano forbids the additive — and, as its specification spells out, forbids bactofugation and microfiltration as well, which are the other two industrial ways of getting spores out of milk. ⭐ With every downstream fix banned by name, the only remaining place to solve it is upstream, and the rule there is much broader than “do not feed silage”: dairy farms are “prohibited from using and possessing silage of any kind,” must keep “entirely separate areas” for any other farming activity (the specification names beef cattle and digesters), and may not even store wrapped-bale grass silage. The stated reason is to keep the housing environment itself uncontaminated and to let the animals’ rumens adapt to a silage-free diet.
⭐ So one PDO answers a microbiology problem with an ingredient, and the other answers it with a rule about what may exist on the property. The cheese is downstream of a decision made a year earlier and several miles away.
⭐ And there is a stricter name hiding inside the looser one Trentingrana is Grana Padano — made under that PDO, in Trentino — but it excludes silage and therefore excludes lysozyme, with extra rules on what the cattle are fed. Everywhere else in this collection a protected name has been a single instrument: a cave, a required practice, a forbidden one, a trademark, a branding iron, a trade secret, a cattle breed, or two countries agreeing to coexist. ⭐⭐ This one contains a stricter name that opts out of its own permissions.
⚠ The labelling fight — and what it is NOT about Lysozyme is an egg protein in a cheese, so whether it must be declared matters. It has been argued over for years; on 14 December 2023 the Lazio regional administrative court (TAR) confirmed it is a preservative rather than a processing aid, which is what determines how it appears on a label under Regulation (EU) 1169/2011. On labels it may read lysozyme, E1105, or merely preservative.
🔴 Do not turn that into a health scare, because the published clinical work points the other way. Oral provocation studies in egg-sensitive and egg-allergic children eating Grana Padano made with lysozyme reported no allergic reactions. ⭐ The argument is about disclosure, not about a demonstrated hazard — a cheese sold on having three ingredients has a fourth, and people were asking to be told. That is a reasonable thing to want and it is a different complaint from “this is dangerous.”
🔴 What this means for your milk, which is the actionable part You have no lysozyme, no bactofuge and no way to ask a supermarket carton what the cows ate. Late blowing is therefore the one failure on this page you cannot fix after the fact — it appears in month six or ten, and the wheel is finished. If you can buy milk from a farm you can actually talk to, this is the cheese to spend that on. If you cannot, make the Dry Jack instead and risk seven months rather than twenty.
