⚠ **UNTESTED.** A briefing. Herve is **Belgium's cheese** — the country's only protected cheese, from the Pays de Herve east of Liège — and it is a small, square, orange, extremely pungent washed rind that most people outside Belgium have never met. 🔴 **And it is the entry in this collection that shows a protected name does not save a cheese.** Herve has a PDO. It also has, at the time of writing, **a handful of producers left** — production has collapsed over the last century from a substantial regional industry to something close to a rescue operation. Ingredients
- 2 gallons whole milk (not ultra-pasteurised)
- 1/4 tsp mesophilic culture
- 1/8 tsp Brevibacterium linens
- 1/16 tsp Geotrichum candidum or a yeast blend
- 1/2 tsp calcium chloride solution, if the milk is shop-bought
- 1/2 tsp liquid rennet, single strength, diluted in 1/4 cup cool unchlorinated water
- 1 quart 3% wash brine, made fresh weekly
- 6 small square moulds, about 2 1/2 inches — or cut a slab into cubes
Directions
Key ingredients
- Warm to 88-90 F / 31-32 C, mesophilic culture plus the surface flora, ripen 45 minutes.
- Rennet at a flocculation multiplier of about 4 — a soft set. Cut to 3/4 inch and stir very gently at the set temperature for 15 minutes. No cook.
- Drain and mould as small cubes, unpressed. ⭐ The small format is the whole design. A 2 1/2-inch cube has a great deal of surface for its volume, so the smear reaches the middle quickly and the cheese becomes pungent all the way through rather than just under the rind.
- Flip often over 12-18 hours at 68 F, then dry-salt at about 2% and dry the surface.
The wash itself — this is the make.

- A 3% brine: 1 oz salt to a quart of water, kept in the fridge, made fresh weekly.

- Add the surface culture to the first two or three washes only.

- Wipe every face and the edge with a cloth or your hand wrung nearly dry. Damp, not soaked.

- Every 2-3 days for the first three weeks, then weekly.

- 55 F / 13 C, 95% RH throughout.
- ⚠ You are not cleaning it, you are farming it. Wiping spreads the culture around and reopens the rind so it can breathe. A rind left alone grows the wrong things.
- ⚠ These are small and they will ripen fast. Check them from week three.
- Ripen 5 to 10 weeks at 55 F. The rind goes a deep orange-red and distinctly sticky. The paste should end up soft to nearly spreadable throughout, not just at the edge.
- Traditionally eaten with dark bread, mustard, and a Belgian brown ale — and the sirop de Liège, a thick apple-and-pear fruit syrup made nearby, which is the local pairing and works for the same reason port works with Stilton.
Notes
Where this recipe came from — and what it isn’t 🔴 UNTESTED. ⚠ This is not Herve AOP. This is a Herve-style cheese.
🔴 A protected name is not a life-support machine Herve holds a protected designation and is Belgium’s only PDO cheese, and it is also very nearly extinct — down to a small number of producers from what was once a real regional industry. ⭐ Protection fixes what a cheese IS. It does nothing about whether anyone still wants to make it or buy it. Everywhere else this section discusses protected names it is about disputes over who may use them; this is the case where the name is secure and the cheese is the thing at risk.
🔴 Why the wash schedule is really a yeast schedule Brevibacterium linens — the organism that makes the orange colour, the tacky surface and the smell — needs a surface pH of roughly 5.5 and above. A cheese coming out of the mould has a rind at about 4.9. So on day one there is nothing up there that B. linens can live on, and washing it with a brine full of B. linens achieves very little.
What happens first is yeast. Debaryomyces hansenii and Geotrichum candidum are salt-tolerant and acid-tolerant, and they eat lactic acid. As they consume it the surface pH climbs, and somewhere in the first one to two weeks the rind crosses 5.5 — and only then does the bacterium you actually wanted have somewhere to grow.
⭐ So the commonest complaint about this family has a specific answer. “I washed it faithfully and it never went orange” almost always means the surface never deacidified: too dry, too cold, too salty, or the wheel over-acidified in the vat and started from too far down.
Why small and square Ripening in this family is surface-inward, so format sets the pace. A small cube has a high surface-to-volume ratio — a lot of rind per unit of paste, and a short distance to the middle. That is why a Herve is pungent throughout while a large washed-rind wheel is strong at the edge and milder at the core. Same organism, different geometry, different cheese.
⭐⭐ Remoudou — and the same tax-dodge mechanism as Reblochon, 500 km away The strong, fully-ripened Herve has its own name: remoudou. It comes from the Walloon remoud — to milk again — because it was made from the last, fattiest milk drawn at the end of a milking.
⭐ Which is exactly the mechanism behind Cheese, Reblochon-Style, five hundred kilometres away in the Savoie, where reblocher also means to milk a second time. Two unconnected regions, two dialects, one observation: the milk that comes out last is the best milk, and it is worth naming a cheese after getting hold of it. Neither tradition seems to have needed the other to work it out.
Piquant and doux Herve is traditionally sold in two grades — a milder doux and a fully-ripened piquant — which is the same weeks-not-technique distinction as Limburger’s young and old.
Still open I have not found a reliable current producer count and would not print one. The direction of travel is well documented; the exact number is the sort of figure that is out of date by the time it is published.
