⚠ **I have not made this one, and I am not going to write it as though I had.** It is on the list -- it is the shortest make in the whole cheese section and I own everything it needs -- and this recipe is me doing the homework first. Marked **UNTESTED**. Mascarpone is the outlier that proves what the acid-set family actually runs on. There is **no culture and no rennet in it at all**: you heat cream, add an acid, and the casein falls out. No bacteria, no enzyme, no aging, nothing to go wrong overnight. It is the clearest possible demonstration that an acid set is about **heat and electrical charge**, not about fermentation. It is also barely a cheese by some definitions and unmistakably one by others, which is the sort of argument this section enjoys. What comes out is thick, sweet, faintly sour, and closer to a set clotted cream than to anything with a rind. The diagnostic detail: **cream only.** Not milk, not a blend. If a recipe tells you to use milk you are being given a cream cheese under the wrong name.

- 1 quart heavy cream, at least 36% fat, not ultra-pasteurised if you can avoid it
- 1/4 tsp tartaric acid, OR 2 Tbsp fresh lemon juice, OR 1/4 tsp citric acid dissolved in 1 Tbsp water
- Pinch of salt (optional — traditionally none)

- Heat the cream to 185 °F / 85 °C in a double boiler. Not over direct heat. Cream scorches readily and scorch is a flavour you cannot remove from a cheese with nothing else in it. Stir gently the whole way up.
- Hold it at 185 °F and add the acid a little at a time. Stir slowly. Within a minute or two the cream will visibly thicken and start to coat the spoon like a custard. ⚠ It will not break into curds and whey like a ricotta — that is the commonest reason people think it has failed and add more acid. It thickens; it does not curdle.
- Stop as soon as it coats the spoon. This is the whole skill. Excess acid gives you a grainy, tight, sour mascarpone, and there is no way back. Under-acidified is recoverable tomorrow; over-acidified is not.
- Cool it in the pot to room temperature, then chill it 6 to 12 hours before draining. The structure sets as it cools. Draining it warm gives you a runnier cheese and more loss.
- Drain in butter muslin, 6 to 12 hours, in the fridge. Longer for a firmer, more spoonable cheese; shorter if you want it pourable for a dessert. Do not squeeze the bag. Squeezing pushes fat through the cloth, and fat is the entire point of this cheese.
- Use it within about five days. It is cream with nothing preserving it.
Notes
Where this recipe came from — and what it isn’t 🔴 UNTESTED. This is the standard published method, cross-checked against several, and I have not run it. When I do, this recipe gets updated in place with the real verdict rather than replaced. The one place the sources genuinely disagree is the acid: tartaric is traditional and the most neutral, citric is the easiest to buy, and lemon juice works but leaves its own flavour in a cheese that has nowhere to hide it.
Where mascarpone came from Lombardy, and specifically the area around Lodi and Abbiategrasso, from at least the late 16th to 17th century. It was a winter product: cold weather let cream be held and worked without souring, and the cheese was traditionally sold in muslin bags rather than moulded.
The name — and a story worth not repeating ⚠ You will read that mascarpone comes from a Spanish governor’s exclamation of “mas que bueno” — “better than good.” That is folk etymology and it has no support. It has the classic shape of an invented origin: a memorable phrase, a named foreigner, no date and no document. The likelier root is the local dialect word mascarpa, a ricotta-like product made from the whey of stracchino, or mascherpa, an old Lombard word for fresh cheese generally. I would rather record an unglamorous derivation that fits the region’s own vocabulary than a good story with nothing under it.
Why there is no culture in it Every other cultured cheese in the collection is waiting on bacteria to make acid. Here you supply the acid directly and heat does the rest. That means there is no overnight step where something can go wrong, no culture to keep alive, and no window to miss. It also means it tastes of cream rather than of fermentation — which is why tiramisu uses it and not something cultured.
Variations Lighter: substitute up to a third of the cream with whole milk. It will be less rich and will drain further — and at that point you are drifting toward a cream cheese made the hot way.
Still open I have not found a satisfactory answer to when tartaric acid became the standard acidulant rather than lemon, or whether the traditional Lombard version used either. If the answer is in an Italian dairy text I have not read it.
