Cheese, Pecorino-Style
⚠ **UNTESTED.** A briefing. Sheep's milk, heavily salted, aged months rather than years, and sharp in a way no cow's-milk grating cheese is. It looks like a smaller Parmesan and it is not one. 🔴 **And the reason it is sharp is not the one everybody gives.** The standard home explanation is *sheep's milk plus more salt equals sharper*. That is half an answer. 🔴 And the reason it is sharp is not the one everybody gives. The standard home explanation is sheep’s milk plus more salt equals sharper. That is half an answer. Ingredients
- 3 gallons sheep milk (cow’s milk works and makes a different cheese — see the notes)
- 3/8 tsp thermophilic culture
- 1/8 to 1/4 tsp lamb or kid lipase powder, dissolved in 1/4 cup cool water 20 minutes ahead
- 3/4 tsp calcium chloride solution, if the milk is shop-bought
- 3/4 tsp liquid rennet, single strength, diluted in 1/4 cup cool unchlorinated water
- About 2 lb coarse salt, for dry-salting the wheel over the following weeks

- Warm to 92-95 F / 33-35 C and add the thermophilic culture. Ripen 30-40 minutes.
- ⭐ Add the lipase with the culture, not with the rennet. It needs time in the milk before the curd closes around it. ⚠ Start at the low end of the dose. Lipase is the one ingredient here you can badly overshoot: too much reads as soapy or frankly rancid rather than sharp, and it cannot be taken back out.
- Rennet at a flocculation multiplier of 2.5, and let it set firm.
- Cut to rice grain. Same fine cut as the Parmesan, same reason.
- 🔴 Cook to no more than 118 F / 48 C. This is the number that separates the recipe from the rest of the page — the real thing is cooked to a legal ceiling of 48 C, below the 50-54 C an alpine wheel goes to. Raise it over 30-40 minutes and hold until the grains are firm. See the notes for why a cheese this dry gets away with a cooler cook.
- Settle, gather and press. ~5 PSI for 30 minutes, flip and redress; ~10 PSI for 2 hours; ~15 PSI for 12 hours.
- 🔴 Dry-salt. Do not brine. Rub the surface with coarse salt, daily for the first week, then every three or four days, then weekly, for a couple of months. Wipe off what has dissolved and gone slimy before each new application. This is the part people skip and it is not optional — the salt is a ripening control here, not seasoning.
- Age at 50-55 F / 10-13 C, 80-85% RH. Five months minimum as a table cheese; eight or more before it grates properly. Brush the rind weekly.

Where this recipe came from — and what it is not 🔴 UNTESTED. 🔴 This is not Pecorino Romano, which may only be made in Sardinia, Lazio or the province of Grosseto, from milk of sheep raised there, set with rennet from lambs raised in the same area.
🔴 Thermophilic, not mesophilic — and the recipe will not warn you Every cheese on this page cooks the curd well past the temperature at which a mesophilic culture dies. Put the wrong one in and you kill your own starter partway through the cook; acidification simply stops, and nothing visible happens at the time. Use Cheese Culture, Thermophilic Mother or a direct-set thermophilic packet.
⭐⭐ The coagulant is the flavouring — the mechanism Lamb and kid rennet paste is made from the stomach of a milk-fed animal and carries, alongside chymosin, a powerful lipase called pregastric esterase plus gastric lipase. That enzyme is specific for the sn-1 and sn-3 positions of the milk fat’s triacylglycerols — and the short-chain fatty acids esterified there, butyric, caproic and caprylic, are precisely the ones that read as piccante. Liberating them is the flavour.
⭐ The same trick appears in a completely different family: Provolone Valpadana is also made with rennet paste, which is why a sharp provolone tastes like a relative of a Pecorino despite being a pasta filata cheese made another way entirely. One enzyme, two families, one flavour.
⭐ And it is why lipase powder is sold to home cheesemakers at all. It is usually kid or lamb pregastric esterase, and it is not a mysterious flavour booster — it is the missing half of a traditional coagulant. ⚠ Slight differences between calf, lamb and kid enzymes give slightly different results, so the animal on the label is not decoration.
⚠ Rennet paste is further from vegetarian than liquid rennet, not closer. Worth saying, since Pecorino Romano is often recommended to people avoiding “animal rennet” in the belief that Italian hard cheeses are somehow exempt. They are not.
⭐⭐ Why the cook can stop lower here — and it inverts the alpine argument The alpine family is the way it is because salt was scarce and had to be hauled up a mountain, so those cheeses are long-aged but comparatively low in salt — which takes away one of the two ripening brakes and forces them onto the other, the hot cook.
🔴 Pecorino Romano is that argument run backwards. Lazio and Sardinia are coastal, salt is at the door and always was, so salt does the controlling — 3.5% to 6.5% of the finished cheese, by far the most in this section — and the cook is free to stop at 48 C. ⭐ Same problem, opposite resource, opposite solution, and both families are internally coherent. Nothing about either is arbitrary.
⚠ Where the published numbers disagree, and I am not going to pick Popular accounts describe the dry-salting as running 80 to 100 days; the research literature on the PDO describes 30 to 70 days. Final salt is given as 3.5-6.5% in some sources and 4-8% in others. These are not reconcilable from outside a dairy, so the recipe gives the practice — salt hard, repeatedly, for a long time — rather than a number I cannot stand behind.
⭐ Sheep’s milk changes the arithmetic, not just the flavour Sheep milk runs about 5.73% fat and 6.99% protein against cow’s 3.42% and 4.09%, and its fresh-cheese yield is 22.9% against cow’s 15.4%. So three gallons of sheep milk makes appreciably more cheese than three gallons of cow’s, and the curd is richer and softer to handle. If you make this with cow’s milk, use the lipase anyway — you will get a sharp cow’s-milk hard cheese, which is a real and pleasant thing, and is roughly what an American “romano” is.
