Cheese, Raclette-Style
⚠ **UNTESTED.** A briefing. ⭐⭐ **Raclette is the only cheese in this entire section whose design brief is a serving method.** The name is from *racler*, **to scrape**: you heat the cut face of a half-wheel and scrape the melted layer onto potatoes. Everything about the cheese is arranged so that it will do that well. Which means it sits deliberately **between** two families. It gets the alpine family's **thermophilic culture and a cook** — but a **cooler** cook than a Gruyère, so the paste keeps enough moisture to flow. And it gets a **washed rind**, wiped with brine while it ripens, which supplies most of its smell and a good deal of its flavour. 🔴 **So a raclette that ripens like a Gruyère has failed at its only job.** If it browns instead of flowing, you cooked it too hot or aged it too long or too dry. **Melting is not a property this cheese happens to have; it is the specification.** ⭐ And the mechanism is the one from [the melting page](/cheese/science/melting/): moderate pH, moderate calcium cross-linking, a proper rennet network, moderate age. **The middle of every axis** — which is a harder target than either extreme.

Ingredients
- 3 gallons whole milk (not ultra-pasteurised)
- 3/8 tsp thermophilic culture, or a thermophilic/mesophilic blend
- 1/16 tsp Brevibacterium linens
- 3/4 tsp calcium chloride solution, if the milk is shop-bought
- 3/4 tsp liquid rennet, single strength, diluted in 1/4 cup cool unchlorinated water
- Saturated brine, calcium-adjusted — see Cheese Brine, Saturated
- 1 quart 3% wash brine, made fresh weekly
Directions
Key ingredients
- Warm to 90 F / 32 C, thermophilic culture and the B. linens, ripen 45 minutes.
- Rennet at a flocculation multiplier of 3. Cut to 3/8 inch — COARSER than a Gruyère, which is the first thing keeping moisture in.
- ⭐ Cook to only 104-108 F / 40-42 C over 30 minutes — well below the alpine range. This is the decision that makes it a melting cheese rather than a keeping one. Hold and stir 20-30 minutes.
- Optionally wash the curd, gouda-fashion, for an even softer, sweeter paste. Many raclette recipes do.
- Drain under the whey and press MODERATELY: ~8 PSI for 1 hour, flip and redress; ~15 PSI for 8-12 hours. ⚠ Not the alpine 30 PSI — a hard press drives out the moisture you are trying to keep.
Brine 8-12 hours per pound, then dry the surface for a day.
- 🔴 Now wash the rind. 3% brine, every 2-3 days for three weeks, then weekly, at 55 F / 13 C, 95% RH. Damp cloth, not soaked. The rind will go from white to pale pink to orange and tacky. ⚠ Remember that B. linens cannot start until yeast has raised the surface pH — the first fortnight is really a yeast schedule.
- Age 3 to 6 months — and stop there. ⭐ This is the one cheese in the section where MORE age makes it worse at its job. Past six months the paste dries and the network breaks down, and it browns instead of flowing.
- To serve: heat the cut face — under a grill, in front of a fire, or in a raclette machine — and scrape the molten layer onto boiled potatoes, with cornichons, pickled onions and black pepper.
Notes
Where this recipe came from — and what it isn’t 🔴 UNTESTED. ⚠ Raclette du Valais AOP and Raclette de Savoie IGP are protected; the generic word is widely used. This is a raclette-style cheese.
🔴 The cook is hot enough to kill your starter Alpine curd goes to 122–130 °F / 50–54 °C, which is well past the point where a mesophilic culture dies. So these cheeses require thermophilic cultures — Streptococcus thermophilus, Lactobacillus helveticus and relatives.
⚠ This is the substitution that ruins the most wheels in home cheesemaking. Put a mesophilic culture in an alpine recipe and you kill your own starter partway through the cook, acidification simply stops, and the recipe will not warn you.
What the hot cook buys is a much drier, more thoroughly contracted curd, which knits into a dense low-moisture body that can be aged for years without drying out or cracking.
⚠ Note that raclette deliberately breaks the family’s own rule — it is cooked at 104-108 °F, far below the 122-130 °F that defines an alpine cheese, precisely so that it will melt. A thermophilic culture is still used and still works at that temperature; the point is that this cheese takes the family’s bacteriology and refuses its cook.
⭐ A cheese designed around a serving method From racler, to scrape. The dish is older than the modern machine — a half-wheel set beside a fire, the melting face scraped off as it softened — and the cheese was bred for it. 🔴 That makes raclette the inverse of everything else in this batch, where the serving method follows from what the cheese turned out to be. What goes wrong It browns instead of flowing — cooked too hot, pressed too hard, aged too long, or the cave was too dry. No orange rind — the pH problem above; see the washed-rind page. It went greasy in the pan — over-ripe, or the paste has broken down.
