Cheese, Scamorza
⚠ **UNTESTED.** A briefing. Scamorza is mozzarella that has been **dried out on purpose** — the same stretched curd, shaped, tied at the neck with string, and hung in pairs for a week or two until the surface goes firm and pale gold and the inside becomes dense enough to slice and grill. It is very often **smoked** (*scamorza affumicata*), and that is what most people have actually eaten. The smoked version is one of the best melting cheeses there is: dry enough not to flood a pan, young enough to still stretch. ⭐ **It is also the simplest possible demonstration that moisture is a dial, not a property.** The same curd, on the same day, becomes mozzarella if you eat it and scamorza if you hang it. Nothing else changes. The diagnostic detail: **the waist.** The string tied round the neck is not decoration — it is how you hang a soft cheese without it tearing itself off the beam, and the pinched shape is the fingerprint of that.

- 1 batch of stretched curd, from Cheese, Mozzarella (Cultured) — about 1 lb
- Saturated brine, calcium-adjusted — see Cheese Brine, Saturated
- 2 ft butcher’s twine, for tying the pair at the neck
- Optional, for affumicata: mild smoking wood (apple, cherry, alder or beech)

Key ingredients
- Stretch the curd as for mozzarella, but form a pear. Shape a ball, then roll a narrow neck at the top with your hands so it looks like a small pear or a fig.
- Brine it. Saturated, calcium-adjusted, cold — about 2 hours per pound. Longer than fresh mozzarella, because this one has to keep.
- Tie two of them together at the neck with a length of twine, leaving enough to hang the pair over a rail or a hook. This is the traditional shape and it is a practical one: a pair balances, a single one twists.
- Hang them somewhere cool with moving air — 55-60 F / 13-15 C — for 1 to 2 weeks. Turn them occasionally. ⚠ Airflow matters more than temperature here. A still, humid corner grows mould on the surface; a draught dries it evenly.
- It is ready when the surface is firm and dry and the cheese has lost noticeable weight. It should feel dense rather than springy, and a cut face should be pale, close and slightly waxy.
- To smoke it — cold, and only cold. Once it is dry to the touch, cold smoke for 2 to 4 hours below 90 F / 32 C. Above that the surface sweats fat and goes greasy and bitter. 🔴 Then rest it wrapped in the fridge for a week before eating, because fresh off the smoke it tastes acrid and one-dimensional — the smoke compounds need time to move inward and mellow. Judging a smoked cheese on the day is the commonest way to conclude you ruined it when you did not.

Where this recipe came from — and what it isn’t 🔴 UNTESTED. Standard method. Scamorza is a generic name, not a protected one.
The name Usually derived from scamozzare, to lop or cut off — a reference to the way the neck is pinched and the cheese is beheaded off the mass. ⚠ Like most food etymologies this is the commonly-given derivation rather than a documented one, and I would not print it without that hedge.
Why it melts so well Two things have to be true at once for a great melting cheese: an intact protein network (so it stretches rather than splitting) and low enough moisture (so it browns rather than flooding). Drying a young stretched curd gives you both, which is why scamorza outperforms both fresh mozzarella and an aged cheese on a pizza or under a grill.
Variations Affumicata — smoked, and the version most people know. Scamorza bianca — unsmoked. Both are the same make.
