⚠ **UNTESTED.** A briefing. Portugal's great cheese, and **the one that will change what you think a coagulant is.** It is set not with rennet but with an extract of **dried cardoon-thistle flowers** — *Cynara cardunculus* — steeped in water and added to warm sheep's milk exactly as you would add rennet. 🔴 **This is not a modern vegetarian workaround.** Cardoon has been used in Portuguese farmhouse sheep-cheese making since ancient times, and the cheeses it makes are among the most prized on the peninsula. ⭐⭐ **And the coagulant has terroir.** The **cardoon ecotype** used measurably affects the finished cheese — which is the idea of terroir applied not to the milk, not to the pasture, but to **the enzyme.** I had not met that anywhere else in cheesemaking. - 2 gallons whole sheep’s milk — cow’s milk works and makes a different cheese
- About 8 g dried cardoon stamens, ground — see the directions
- 1 tsp calcium chloride solution, if the milk is shop-bought
- Coarse salt, for the surface
- Muslin bandage, for binding the wheel

- 🔴 Make the extract the night before. Grind the dried stamens to a powder and steep them in room-temperature water at about 1 g to 10 ml — so 8 g in 80 ml — for several hours, then strain through fine cloth. ⚠ Do not heat the extract.
- Warm the milk to 84-86 F / 29-30 C. ⭐ No starter culture in the traditional make — the raw milk’s own flora does the acidification, which is part of why this is a raw-milk cheese at home in a way many are not.
- Stir the cardoon extract through and leave it to set. ⚠ Expect 40 to 60 minutes, noticeably slower and softer than a rennet set, and do not add more because it looks weak.
- Cut coarsely, to about 1 inch, and stir very gently for 20-30 minutes at the set temperature. No cook. The curd is fragile; handle it like a soft-ripened cheese rather than a hard one.
- Drain in a cloth-lined mould under light weight, 3 to 4 hours, flipping twice. ⚠ Light — you are keeping moisture, not driving it out.
- Dry-salt the surface and rest it overnight.
- 🔴 Bind the wheel in a muslin bandage. As it ripens the paste softens dramatically, and the bandage is what stops it spreading across the shelf. This is not decoration.
- Age at 50-55 F / 10-13 C, 85-90% RH, for 30 to 45 days, turning every couple of days.
- What right looks like: a thin natural rind and a paste that is buttery and almost spoonable at room temperature, with a clean bitter edge behind the flavour rather than in front of it.
Notes
Where this recipe came from — and what it is not 🔴 UNTESTED. 🔴 And this is not Serra da Estrela DOP, which is made from the milk of the Bordaleira and Churra sheep breeds in a defined region of Portugal.
⭐ Making the cardoon extract, which is the whole point The part used is the dried lavender stamens from the flower of Cynara cardunculus, not the leaf or the stalk. Dry them at room temperature for about three weeks, stirring periodically so they do not mould; dried, they keep about two years.
To use: grind them to a powder, then steep at roughly 1 g of stamen to 10 ml of room-temperature water for a few hours, and strain. The working rate is about 1 g of dried flower per litre of milk — so a gallon takes about 4 g, steeped in 40 ml of water.
⚠ Treat those as a starting point and expect to calibrate. Plant coagulants vary far more batch to batch than a standardised rennet does, which is the price of the flavour.
🔴 A correction this section published about its own reasoning It is often argued — and this collection argued it once — that plant coagulants are broadly proteolytic and therefore bitter, which is why animal rennet supposedly wins. ⚠ That is not a law, and cardoon is the counter-example that retired it here: cardoon measures higher proteolysis AND less bitterness. ⭐ The two do not track each other the way the tidy explanation needs them to, and the argument was withdrawn on the rennet page rather than quietly left standing.
⭐ What actually makes this cheese is not in the milk This is the thread running through the uncommon cheeses: the identity comes from a plant or a container, not from the dairy. A thistle’s stamens, a Sahel milkweed, a kidskin bag, a tube of fir bark, a carved spruce mould, an oven. ⭐ The world tour notes that the vessel is an ingredient on every inhabited continent, and lists four plant coagulants separately — they are the same observation. In each case somebody had milk and solved the rest with whatever was to hand, and the solution became the cheese.
