Serves 1 Quart Mason Jar

Ingredients

  • 1 cup distilled white vinegar
  • 3/4 cup water
  • 1/2 cup sugar
  • 2 tsp whole black peppercorns
  • 1 tsp coriander seeds
  • 1/2 tsp crushed red pepper flakes
  • 1 lb fresh cherries, stemmed and pitted
  • 1 large rosemary sprig or 1 tsp dried needles

Directions

  1. Bring first 6 ingredients to a boil in a medium stainless-steel saucepan, stirring to dissolve sugar.

Reduce heat to medium and simmer 5 minutes.

  1. Using a fine-mesh sieve, strain liquid into a medium size bowl then return liquid to pan.
  2. Add cherries and rosemary to saucepan and simmer until cherries are tender, 3-5 minutes.
  3. Transfer cherries and rosemary to a 1 quart mason jar.

Pour in enough pickling liquid to cover cherries.

  1. Keep in fridge or can using water bath (or steam) method.
