Combine ingredients
- In a high-speed blender, combine the ice, milk, strawberries, strawberry puree/syrup, and vanilla syrup (and xanthan gum, if using).
Blend
- Blend on high speed until the mixture is completely smooth and creamy, with no ice chunks remaining. This can take up to a full minute.
Adjust
- Taste the mixture and add more sugar or syrup if you prefer it sweeter. If the consistency is too thick, add a splash more milk; if too thin, add a few more ice cubes and blend again.
Assemble and Serve
- Pour the mixture into a tall glass. Top generously with a swirl of whipped cream and garnish with extra strawberry slices or a drizzle of strawberry syrup.
