Ingredients
- 8 slices of your favorite bread
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 pound shrimp, peeled and deveined
- 2 tbsp butter
- 4 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 4 tbsp butter (for grilling)
Directions
Prepare Garlic Butter Shrimp
- In a skillet over medium heat, melt 2 tbsp of butter.
Add minced garlic and sauté until fragrant.
- Add the shrimp, salt, black pepper, and red pepper flakes (if using).
- Cook the shrimp until pink and opaque, about 2-3 minutes per side.
- Remove the shrimp from the skillet and set aside.
Prepare Garlic Butter
- In a small bowl, mix the remaining butter with half of the chopped parsley and some minced garlic.
Assemble the Sandwiches
- Spread garlic butter on one side of each slice of bread.
- On the non-buttered side of 4 slices of bread, layer with mozzarella cheese, shrimp, and Parmesan cheese.
Sprinkle with the remaining parsley.
- Top with another slice of bread, buttered side out.
- Grill the Sandwiches:
Heat a skillet or griddle over medium heat.
- Place the assembled sandwiches in the skillet and cook until golden brown and the cheese is melted, about 3-4 minutes per side.
- Serve:
Cut the sandwiches in half and serve hot.
