Gumbo, Rabbit and Sausage (Keto)

Ingredients

  • 1 cut up rabbit
  • 1 cup keto flour
  • 5 cups chicken broth
  • 1 lb John Leger smoked Sausage
  • 2/4 cup oil
  • 3 onions
  • 1 bell pepper
  • 2 stalks celery
  • 3 garlic cloves
  • 1 tbsp Cajun180 Valor seasonings
  • 1 tsp cayenne pepper powder
  • Salt and pepper
  • Gumbo file

Directions

  1. First make your Roux, ta’day low & slow, until your desired color, keto flours will darken quicker
  2. Once you get your obtained color then add in your Trinity, I probably cooked it for about 20 minutes, then the seasonings and garlic , next I added in my chicken broth about a half a cup to a cup to start with, and then another cup or two and then the rest of the liquid I think I put about five cups total I didn’t really measure today, I used chicken broth
  3. While I was doing this I had my pit at about 225 cooking the rabbit for about an hour, I smoked it with pecan wood today

  5. Once the rabbit was finished, I tossed it in the gumbo and let it summer for about an hour, and you are ready to eat today I didn’t have any type of Keto rice, I just enjoyed the chicken so much
