Old Fashioned, Maple and Rye

An autumn drink, and the one where rye earns its place. Rye is drier, peppery, faintly minty, with a harder edge than bourbon and less corn sweetness underneath — which means it can take a sweetener with an actual flavour of its own without the drink collapsing into candy.

🔴 Maple syrup is not a sugar syrup and you cannot swap it in by volume for simple. Real maple is roughly two-thirds sugar with a full flavour of its own, and it is already about as concentrated as a 2:1 rich syrup. Use it at rich-syrup volumes, not at 1:1 volumes, or you will make something far too sweet.

Grade A Dark or Very Dark carries further than the pale grades. The pale stuff disappears.

Ingredients

  • 2 oz rye whiskey (100 proof if you can — bottled-in-bond is ideal)
  • 1/4 oz real maple syrup, Grade A Dark or Very Dark
  • 3 dashes Angostura bitters
  • 1 dash black walnut bitters (optional but very good)
  • 1 wide strip orange peel
  • 1 large clear ice cube

Directions

  1. Maple syrup and bitters into the glass. Stir them together thoroughly before anything else goes in — maple is viscous and will sit in a layer at the bottom if you let it.
  2. Add the rye, stir a couple of turns.
  3. Large cube in, stir 20–30 seconds.
  4. Taste. Maple is the one sweetener here that is easy to overshoot; if it reads sweet, next time go to a scant 1/4 oz.
  5. Express the orange peel, wipe the rim, drop it in.

Notes

American rye vs Canadian “rye” — these are not the same thing. American rye whiskey is legally at least 51% rye, on the same terms as bourbon (160-proof distillation ceiling, 125-proof barrel entry, new charred oak). In Canada, Canadian whisky, rye whisky and Canadian rye whisky are legally interchangeable names for the same product and need not contain much rye at all — a historical hangover from when rye genuinely was the flavouring grain. Buy an American rye for this.

A lot of differently branded ryes are the same whiskey. MGP of Indiana distils a very popular 95% rye mash and sells it in bulk to brands that do not distil anything themselves. That is legal and normal and often excellent — but a shelf of eight “craft” ryes may be three distilleries wearing eight labels. Check the back label for “distilled in Indiana.”

The maple pairs naturally with maple-wood smoke if you have a smoking gun.
