Pie, Banoffee
Banoffee pie is a British dessert pie made from bananas, whipped cream, and a thick caramel sauce (made from boiled condensed milk or milk jam), combined either on a pastry case or one made from crumbled biscuits and butter. Some versions of the recipe include chocolate, coffee, or both. The dessert's name, sometimes spelled "banoffi", is a portmanteau combining the words banana and toffee. A layer of toffee bits (bagged by Heath is good) really takes this dessert up a notch. If you can’t find them though don’t worry you can leave them out.

Ingredients
- Crust (You can also use a biscoff crust - [recipe:Pie Crust, Biscoff]):
- 2 cups graham cracker crumbs
- 10 Tbsp. unsalted butter melted
¼ cup brown sugar
- 1 pinch kosher salt (unless using salted butter)
Filling
- 2 cups dulce de leche divided (or make your own - [recipe:Dulce De Leche])
- 3 bananas sliced, plus additional, for garnish
- ½ cup toffee bits plus additional, for garnish
Topping
- 1 pint heavy whipping cream
- 3 Tbsp. granulated sugar
- ½ tsp. vanilla extract
Directions
- Preheat oven to 350°F.
The crust
- In a medium bowl, stir together graham cracker crumbs, melted butter, brown sugar, and salt.
- Firmly press mixture into the bottom and up the sides of a 9-inch deep-dish pie plate.
- Bake until lightly set, about 8 minutes. Set aside.
- The pie:
Pour 1½ cups dulce de leche into bottom of crust.
- Top with bananas, arranging in concentric circles, overlapping slightly.
- Make sure the bananas are completely covered in the filling to stop them from turning brown.
- Sprinkle with ½ cup toffee bits; drizzle with ¼ cup dulce de leche.
The topping
- Using a stand mixer or hand mixer, beat cream and 3 Tbsp. sugar at medium high speed until soft peaks form. Stir in vanilla.
Spoon whipped cream over banana layer.
- Drop teaspoons of dulce de leche over whipped cream layer; swirl using the back of a spoon.
- Cool:
Refrigerate 30 minutes to 3 hours.
- Garnish with any combination of toffee bits, banana slices, shaved chocolate

What Is Dulce de Leche?
Dulce de leche is similar to caramel, but a little sweeter and creamier. It’s prepared by slowly heating sugar and milk until everything caramelizes.
