Ingredients
- (100%) 5 lbs Venison, trimmed, cubed
- (30%) 1.5 lbs Pork fat, cubed
- (2%) 7 Tsp Salt
(1%) 2 Tbsp Sugar
- (1%) 5 Tsp Fresh garlic, minced
- (0.5%) 3 Tbsp Mexican oregano, dried
(0.5%) 4 Tsp Cumin
- (0.5%) 0.4 Oz by weight Dried chipotles, ground
- (0.25%) 2 Tsp Cayenne pepper
- (4%) 3.2 Oz Dry red wine
- (4.8%) 3.84 Oz by weight Canned chipotle peppers (pureed)
Directions
- Mix all ingredients except wine, and grind through coarse/medium die of your meat grinder. Add wine to the ground meat and spice mixture, then mix well with paddle attachment or wooden spoon.
- Stuff into hog casings (optional)
