Smoked Salmon Cucumber Bites

Ingredients

  • 3 oz smoked salmon (lox)
  • 1 large cucumber, sliced into ½” rounds
  • 2 oz light cream cheese (reduced fat)
  • 1 tbsp capers
  • 2 tbsp red onion, thinly sliced
  • 1 tsp lemon juice
  • Fresh dill (optional)
  • Everything bagel seasoning

Directions

  1. Mix cream cheese with lemon juice until smooth.

Arrange cucumber rounds on a plate.

  1. Spread a small amount of cream cheese on each cucumber round.
  2. Top each with a piece of smoked salmon.

Add a few capers and a thin slice of red onion.

  1. Sprinkle with everything bagel seasoning and fresh dill.
  2. Serve immediately.

Notes

This meal is almost entirely protein and healthy fat — zero glycemic impact. Excellent for mornings when blood sugar is already elevated. Smoked salmon is rich in omega-3s and vitamin D. The cucumber provides crunch and hydration.
