Slow-simmered collard greens cooked with smoked ham hock for deep Southern flavor.
Ingredients
- 2 lbs fresh collard greens, stemmed and chopped
- 1 smoked ham hock (or 1/2 lb smoked turkey)
- 6 cups water or chicken broth
- 1 tablespoon bacon grease or oil
- 1/2 onion, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1 tablespoon white or cider vinegar
Directions
- In a large pot, bring the ham hock and water or broth to a boil, then simmer 30 minutes to build a flavorful broth.
- Heat the bacon grease in the pot area or add the onion to the broth and cook until softened.
- Add the chopped collard greens, salt, pepper, and red pepper flakes.
- Reduce heat and simmer, partially covered, for 45 to 60 minutes, until the greens are very tender.
- Stir in the vinegar at the end and adjust seasoning.
- Serve the greens with some of the pot liquor.
