Southern Fried Catfish and Hush Puppies

Mountain streams were home to whiskered catfish that became the centerpiece of legendary fish fries that brought entire communities together. Fresh-caught catfish soaked in buttermilk, dredged in seasoned cornmeal, and fried in hot lard. Alongside: hush puppies — cornmeal fritters dropped by spoonfuls into the same hot fat. Legend says hush puppies got their name from cooks who tossed them to barking dogs. The combination satisfied both body and soul.

Ingredients

  • 4 catfish fillets (about 6–8 oz each), or whole small catfish cleaned and skinned
  • 1 cup buttermilk for soaking
  • 1½ cups cornmeal

½ cup all-purpose flour

  • 1 tsp salt
  • 1 tsp black pepper
  • ½ tsp cayenne pepper

Lard for deep frying (or vegetable oil)

  • Hush puppies: 1½ cups cornmeal, ½ cup flour, 1 tsp baking powder, ½ tsp salt, 1 cup buttermilk, 1 egg, ½ cup onion finely diced

Directions

  1. Soak catfish fillets in buttermilk for at least 30 minutes — this removes the earthy, muddy taste.
  2. Mix cornmeal, flour, salt, pepper, and cayenne in a shallow dish.
  3. Remove catfish from buttermilk. Let excess drip off. Dredge each piece in the cornmeal mixture, pressing to coat well.
  4. Heat lard in a large cast iron pot or skillet to 375°F. The oil should be at least 2–3 inches deep.
  5. Fry catfish in batches — do not crowd — for 5–7 minutes until golden brown and fish flakes easily.
  6. Drain on a rack. Keep warm in a 200°F oven while frying remaining fish.
  7. For hush puppies: Mix all hush puppy ingredients until just combined. The batter will be thick.
  8. Drop by rounded tablespoons into the same hot fat. Fry 3–4 minutes, turning once, until golden all over.
  9. Serve catfish and hush puppies together immediately, with hot sauce and sliced pickles.

Notes

The buttermilk soak is essential — it completely removes any muddy or earthy taste. Despite catfish’s muddy reputation, properly soaked and fried fillets are surprisingly sweet and mild. Community fish fries were social events that brought entire hollows together. This combination proved that mountain cuisine could compete with any coastal seafood.
