Spinach & Feta Egg Scramble

Ingredients

  • 3 large eggs
  • 2 cups fresh spinach
  • 2 oz feta cheese, crumbled
  • 4 cherry tomatoes, halved
  • 2 tbsp diced red onion
  • 1 tsp olive oil
  • ½ tsp oregano
  • Black pepper

Directions

  1. Heat olive oil in a non-stick pan over medium heat.
  2. Add red onion and sauté 2 minutes.
  3. Add cherry tomatoes, cook 1 minute.

Add spinach and wilt, about 1 minute.

  1. Whisk eggs with pepper and oregano. Pour into pan.
  2. Stir gently until eggs are almost set but still slightly creamy.
  3. Remove from heat (residual heat will finish cooking). Top with crumbled feta.

Notes

Remove from heat slightly before done — eggs continue cooking for 30–60 seconds. Overcooked eggs become watery and lose texture. Feta adds salty, creamy richness without excess calories.
