Spinach & Feta Egg Scramble

Ingredients
- 3 large eggs
- 2 cups fresh spinach
- 2 oz feta cheese, crumbled
- 4 cherry tomatoes, halved
- 2 tbsp diced red onion
- 1 tsp olive oil
- ½ tsp oregano
- Black pepper
Directions
- Heat olive oil in a non-stick pan over medium heat.
- Add red onion and sauté 2 minutes.
- Add cherry tomatoes, cook 1 minute.
Add spinach and wilt, about 1 minute.
- Whisk eggs with pepper and oregano. Pour into pan.
- Stir gently until eggs are almost set but still slightly creamy.
- Remove from heat (residual heat will finish cooking). Top with crumbled feta.
Notes
Remove from heat slightly before done — eggs continue cooking for 30–60 seconds. Overcooked eggs become watery and lose texture. Feta adds salty, creamy richness without excess calories.
