Stuffed Bell Peppers with Ground Turkey & Rice

Ingredients

  • 4 large bell peppers
  • 7 oz 93% lean ground turkey

½ cup cooked brown rice

  • 1 can (14 oz) diced tomatoes, drained

½ cup diced onion

  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp cumin

Salt, pepper

  • 2 oz shredded part-skim mozzarella
  • 1 tbsp olive oil
  • Optional: fresh parsley

Directions

Preheat oven to 375°F (190°C).

  1. Cut tops off peppers, remove seeds. Place in a baking dish.
  2. Cook turkey with onion in olive oil over medium heat.
  3. Add garlic, cumin, Italian seasoning, and diced tomatoes. Simmer 5 minutes.
  4. Stir in cooked rice. Season with salt and pepper.
  5. Fill each pepper with turkey-rice mixture.

Top with mozzarella. Cover dish with foil.

  1. Bake 30 minutes. Remove foil, bake 5 more minutes to brown cheese.

Notes

Use different colored peppers for variety and visual appeal — each color has slightly different antioxidant profiles. Yellow and orange peppers are sweetest. Can be made ahead and refrigerated unbaked up to 24 hours.
