Ingredients

  • 4 large egg whites + 1 whole egg
  • ½ cup baby spinach
  • ¼ cup diced bell pepper (any color)

¼ cup sliced mushrooms

  • 2 tbsp diced onion
  • 1 oz low-fat feta cheese
  • 1 tsp olive oil
  • Salt, pepper, garlic powder to taste

Directions

  1. Whisk egg whites and whole egg together with a pinch of salt.
  2. Heat olive oil in a non-stick pan over medium heat.
  3. Add mushrooms, peppers, and onion. Sauté 3–4 minutes until softened.

Add spinach and cook 1 minute until wilted.

  1. Pour egg mixture over vegetables. Let edges set 1–2 minutes.

Sprinkle feta on one half. Fold omelet in half.

  1. Cook 1–2 more minutes until center is set. Slide onto plate.

Notes

Using mostly egg whites keeps calories low while maximizing protein. The one whole egg adds richness and healthy fat. If you dislike feta, use 1 oz shredded low-fat cheddar.
