The Curd
Once the milk has set you have a gel filling the vat, and everything from here is one question asked in five different ways: how much water are you leaving in?

Syneresis: the only word worth learning
Syneresis is a gel contracting and expelling its liquid. It is what a rennet curd does continuously, from the moment you cut it until you stop encouraging it.
The protein network formed during coagulation is not static. Its strands keep finding new bonds with each other, and each new bond pulls the network slightly tighter, squeezing whey out of the spaces. Left alone, gently, it will keep doing this for hours.
Every technique below is a way of making syneresis go faster or slower. That’s all cheesemaking is, after the set.
1. The cut — surface area
Cutting the gel into cubes does one thing: it creates surface, and whey can only leave through a surface.
- Large cubes — less surface per volume, less whey out, wetter curd. This is your soft and semi-soft cheeses.
- Small cubes, down to rice-grain — enormous surface, aggressive drainage, dry curd. This is your hard grating cheeses.
It really is close to that simple, and it’s the first and largest decision you make.
Cut cleanly. A sharp knife or harp drawn steadily gives clean faces. A blunt tool or a hurried hand tears rather than cuts, and torn curd sheds fat and fine protein particles into the whey. You can see it happen: healthy whey is yellowish-green and translucent, and whey that has gone cloudy and white is your yield leaving the vat.
The clean break, and how to time the cut
Knowing when to cut is the part recipes handle badly, because they give you minutes.
The clean break is the test: slide a knife in at an angle and lift. A ready curd splits along a clean line and the whey that fills the split runs clear. An unready curd tears raggedly and the whey is milky.
Better still, use flocculation. Watch for the moment the milk first goes faintly grainy on the surface — that’s flocculation — and note how many minutes it took from adding rennet. Multiply that by the factor the recipe gives, typically 3 to 5 depending on the cheese, and cut then.
Why this beats the clock: it is a measurement of your own vat, on the day, with your milk and your rennet and your kitchen temperature. A flat “cut at 45 minutes” is a measurement of somebody else’s.
2. Healing — the pause nobody mentions
Immediately after cutting, stop and wait. Three to five minutes, no stirring.
The freshly cut faces are raw network with nothing holding them. Given a few minutes undisturbed they heal: a skin of knitted protein forms across each cut face, tough enough to survive being stirred. Start agitating before that happens and you will shatter the cubes into fines and lose them and their fat to the whey.
This is the step most often skipped by people in a hurry, and the damage is invisible until the yield comes up short.
3. Stirring — keeping it moving without breaking it
Once healed, gentle continuous stirring keeps the cubes from matting into a single lump and keeps whey moving away from the surfaces so expulsion continues.
The instruction “stir gently” means something specific: enough to keep the cubes in motion and separate, not enough to knock them against each other or the vat. Early on, the curd is still fragile. It toughens as it loses water, so you can be firmer later than at the start.
4. The cook — heat contracts the network
Raising the temperature makes the protein network contract more forcefully and drives out a great deal more whey. It is the strongest tool you have.
Two rules that matter more than the target number:
Go slowly. Something like 1 °F every few minutes is typical, and the reason is that fast heating firms the outside of each curd cube before the inside has expelled its whey. You seal it. The result is a cube that is dry on the outside and wet in the middle, which shows up later as an unevenly ripened cheese with a pasty core.
And the top temperature is not negotiable. It sets how much moisture leaves, and — as cultures covers — it decides which of your bacteria survive. A cheddar cooked to alpine temperatures is not a slightly firmer cheddar; it’s a different cheese made with a dead starter.
5. Washing — the lever that surprises people
Replace some of the whey with warm water and you have made a washed-curd cheese, and the mechanism is not what most people assume.
You are not rinsing anything off. You are removing lactose from the system.
Less lactose means the bacteria have less to eat, so they produce less acid, so the finished cheese sits at a higher pH. Higher pH means more calcium stays bound in the protein network, and the result is a cheese that is sweeter, milder, springier and more elastic — instead of the sharp, firm, sometimes crumbly character of an unwashed curd.
This is gouda, edam, havarti, Monterey Jack, colby. And it is exactly what Joseph Steinwand did by accident in Wisconsin in 1885 when he washed a cheddar curd with cold water and invented Colby — arriving independently at the same lever the Dutch had been using for centuries.
It’s also the clearest demonstration that the dial is real: same milk, same rennet, same culture, one extra step, and you get a different family of cheese.
Cheddaring: the outlier
Cheddar does something none of the above describes.
After draining, the curd is cut into slabs and the slabs are stacked, turned, and re-stacked on each other for an hour or more while they stay warm. Their own weight presses whey out, and — this is the part that matters — the curd is still acidifying throughout. Under that combination of warmth, pressure and falling pH, the texture transforms: from a heap of grains into something layered and fibrous, closer to cooked chicken breast than to cheese.
Then it’s milled into pieces and salted directly on the curd rather than brined afterwards, which is unusual and is why cheddar’s salt is so evenly distributed.
That sequence is what makes cheddar a technique rather than a place — and why the name escaped around the world while Roquefort’s stayed home.
