- 3 gallons whole milk (not ultra-pasteurised) — raw if you can get it and are comfortable
- 3/8 tsp thermophilic culture
- 3/4 tsp calcium chloride solution, if the milk is shop-bought
- 3/4 tsp liquid rennet, single strength, diluted in 1/4 cup cool unchlorinated water
- Saturated brine, calcium-adjusted — see Cheese Brine, Saturated
- 1 quart 3% brine, for washing the rind

- Follow Cheese, Gruyère-Style almost exactly — thermophilic culture at 90-92 F, floc multiplier 2.5-3, cut to rice grain, fore-work, cook to 122-128 F / 50-53 C over 30-40 minutes, hold and stir, drain under the whey.
- ⭐ Two differences worth making. Comté is traditionally cooked a touch less hot than an Emmental and pressed a touch less hard than a Gruyère — aim at the lower end of both ranges. And it is a raw-milk cheese in its home, which contributes the complexity the long age develops.
- Press: ~10 PSI for 30 minutes, flip and redress; ~20 PSI for 2 hours; ~25 PSI for 12-18 hours.
Brine 12-24 hours per pound.
Age at 50-55 F / 10-13 C, 90-95% RH, washing or brushing the rind weekly with 3% brine.
- Age 6 to 24 months. ⭐ Comté is graded and scored in its home, and the scoring is a real institution — wheels are assessed and only those above a threshold carry the name. You have no grader, so you are your own, which is an argument for making notes and for cutting a wheel at six months to learn what a young one tastes like before committing to two years.

Where this recipe came from — and what it isn’t 🔴 UNTESTED. 🔴 This is not Comté AOP.
🔴 The cook is hot enough to kill your starter Alpine curd goes to 122–130 °F / 50–54 °C, which is well past the point where a mesophilic culture dies. So these cheeses require thermophilic cultures — Streptococcus thermophilus, Lactobacillus helveticus and relatives.
⚠ This is the substitution that ruins the most wheels in home cheesemaking. Put a mesophilic culture in an alpine recipe and you kill your own starter partway through the cook, acidification simply stops, and the recipe will not warn you.
What the hot cook buys is a much drier, more thoroughly contracted curd, which knits into a dense low-moisture body that can be aged for years without drying out or cracking.
⭐ Why this family looks the way it does Every characteristic traces back to a mountain, and four separate pressures pushed the same way. Short season, long winter — the cheese had to survive from summer alp to spring, so: low moisture, long keeping. Hard transport — everything came down a track, so: fewer, denser, more valuable units. Scarce salt, hauled uphill at cost, so: long-aged but comparatively low in salt — which removes one of your two ripening brakes and forces you onto the other. And herds too small to fill a wheel alone, so: cooperation.
🔴 Take salt away as a lever and you must control ripening some other way. The answer is the hot cook. This is the most coherent family in the taxonomy — nothing in it is arbitrary.
⭐⭐ The cooperative as technology ~500 litres of milk per wheel is the number that explains the fruitière. ⚠ What a home wheel can and cannot be You will be working at roughly a fiftieth of the intended scale. A small wheel dries faster, ripens less evenly, and cannot develop the slow deep flavours a 40 kg wheel does over two years. What you can make is a good alpine-style cheese with a hot cook, a firm press and real patience — and that is worth doing. It is not a small Comté, and a recipe that implies otherwise is setting you up.
