Ingredients

  • 12 eggs
  • Salt (optional for garnishing)
  • Finely chopped parsley (optional for garnishing)
  • Pepper (optional for garnishing)
  • Bbq rub (optional for garnishing)

Directions

Preheat Smoker

  1. Making smoked eggs isn’t difficult. Start making the recipe by preheating your pellet smoker to 325ºF. But make sure to thoroughly clean your grill before smoking anything. I will be using cherry wood chips because I love the cherry smoky flavour. You can use the wood chips and smoker you are comfortable cooking at. Make sure to use indirect heat.

Smoke Eggs In Shells

  1. Take the raw eggs and place them directly on the grill of the smoker for smoking. Allow them to smoke for 35 minutes. In thirty minutes, you will a consistency similar to boiled eggs. The eggshells will turn a little yellow due to smoking. If you see small brown spots on the eggshells, no worries! It’s normal.

Remove Eggs & Place In Ice Bath

  1. When 30 minutes of initial grilling are completed, remove the eggs and place them in ice water. Let the eggs enjoy that ice bath for almost 10 minutes. When the eggs are cooled, peel them. We give an ice bath to the eggs for stopping the process of cooking in them, and it also makes peeling easier.
  2. After peeling the eggs, place them again over the grill. Make sure the temperature is lowered to 175ºF to 180ºF. Smoke the eggs for another 35 minutes. This time is enough to give eggs a delicious smokey flavour and get a crisp golden brown colour on them.
  3. Some people might like fully hard-boiled eggs. For that, you can keep the eggs on the grill for almost around 1.5 or 2 hours. But be informed that grilling for this long will make the outer crust of the egg dry and might get a bit rubbery.

– Garnish & Serve

  1. Take the smokey eggs out, place them on a cooking sheet or cooking tray and slice each egg into an equal half. Garnish them with some salt, pepper, finely chopped parsley, or oregano. You are now ready to serve smoked eggs as a side dish with the main course like Smoked New York Steak, Smoked T-bone Steak, or a snack at a tea party.
  2. Start your smoker, grab your pellets, and as per the instructions, preheat the smoker at 325ºF. Make sure you’re using indirect heat!
  3. Place eggs directly onto the grill grates, and cook for 35 minutes.
  4. Remove the eggs from the smoker and place them in ice-cold water. Allow them to take an ice bath for 10 minutes to stop the cooking process.
  5. Remove the eggs from the ice bath and peel. Reduce the heat on the grill to 175ºF. Return the eggs to the grill and smoke again for 35 minutes to an hour.
  6. Remove the eggs from the grill, season, and enjoy!
