Lipase Powder

The powder that makes a young cheese taste older — and the missing half of a traditional rennet paste. It is easy to overdo, it is not vegetarian, and its failure mode is not ‘a bit strong’, it is rancid.

What it is

Lipase is an enzyme that breaks down fat. In cheese that is lipolysis, and it liberates free fatty acids — which is exactly where the sharp, piquant, peppery character of a provolone piccante, a Pecorino or a Feta comes from.

What is sold to home cheesemakers as “lipase” is pregastric esterase, and knowing that explains everything else about it. Pregastric esterase is the enzyme in the throat tissue of a young ruminant, and it is what makes a traditional rennet paste — the lamb or kid stomach preparation used for Pecorino and Provolone Valpadana — a flavouring as much as a coagulant. A liquid calf rennet on sheep’s milk gives you a salty grating cheese; the same milk set with lamb rennet paste gives you a Pecorino, and the enzyme is the difference.

It is specific to the sn-1 and sn-3 positions on the fat molecule, which is why it liberates the short-chain acids — butyric, caproic, caprylic — that give that particular pungency rather than a general greasiness.

Using it

Very little, dissolved in cool unchlorinated water, added to the milk before the rennet. To put real numbers on it, a typical home-scale packet directs ⅛ teaspoon for 1–2 gallons and ¼ teaspoon for 3–5 gallons — and a one-ounce packet is rated for up to 80 gallons of milk. That is the scale you are working at.

The strength is chosen at the shop, not at the vat, and it is graded by the animal. A vendor’s own label runs Mild (calf) · Sharp (sheep/goat) · Extra Sharp (sheep) · 100% goat — so calf is the gentle end and the sheep preparations are the assertive one. ⚠ There is no industry-standard scale here; another supplier’s “sharp” is not guaranteed to match. Treat the grade as that vendor’s, and start below what you think you want.

Read the ingredients on the packet, because there are usually three. A typical one lists lipase, maltodextrin and milk — the enzyme is cut with maltodextrin as a carrier so that a workable pinch is measurable at all, and the preparation contains milk, which matters if you are cooking for someone with a dairy allergy as well as confirming this is not a vegetarian product.

The two things to be straight about

It is easy to overdo, and the failure mode is rancid. Free fatty acids past a certain point do not read as “strong cheese,” they read as spoiled — soapy, or like sick. That is not a fault you can age out; the enzyme keeps working. Under-dose deliberately the first time you use a new lipase.

It is not vegetarian, and it is further from vegetarian than rennet is. There is a vegetarian route to a coagulant — microbial rennet, or fermentation-produced chymosin depending on where you draw the line — and there is no equivalent for pregastric esterase. A cheese that needs this flavour needs an animal enzyme.

Substitutes (if absolutely necessary)

  • Longer aging — the honest answer. Lipase buys you time, not a flavour you cannot otherwise reach; a cheese held longer develops its own sharpness through lipolysis.
  • A traditional rennet paste — not a substitute so much as the original: it carries the same enzyme, along with the coagulant.
  • Nothing, and choose a different cheese — a mild wheel is a better outcome than a rancid one, and this is the ingredient where restraint pays.
  • Note: there is no vegetarian equivalent, and there is no way to remove it once it is in the milk.

Where to find it

  • Online: cheesemaking suppliers, sold as kid, lamb or calf lipase powder in small jars. Buy the smallest jar; you will use very little.
  • Local store: effectively nowhere.
  • Storage: freezer, tightly sealed. It loses strength at room temperature, and a jar that has been warm and damp is unpredictable rather than merely weak — which is worse, given how little you are dosing.
