Nisu (Finnish Cardamom Bread)
Nisu is the braided, cardamom-scented sweet bread that is the signature bake of the Finnish U.P. — the western-Finland word for what the rest of Finland now calls pulla, frozen in place here by the immigrants who carried it over. Warm, glossy, faintly sweet, and heady with cardamom, it's coffee bread in the truest sense: you make it to have something to put next to a cup. Ingredients
- Dough
- 1 cup whole milk, scalded then cooled to warm
- 2 1/4 tsp (1 packet) active dry yeast
- 1/2 cup sugar
- 1 tsp salt
- 2 tsp ground cardamom, ideally freshly crushed from ~10 green pods
- 2 eggs, beaten
about 4 to 4 1/2 cups all-purpose flour
- 1/3 cup butter, softened
- Finish
- 1 egg beaten with 1 Tbsp milk, for wash
- pearl sugar and sliced almonds

- Cardamom is the soul of it — fresh-crushed pods beat pre-ground every time.
- Scald the milk, then build the dough:
- Scalding (heating the milk almost to a simmer, then cooling) is traditional and it does a real job — it gives a softer, taller loaf. Cool it to warm, proof the yeast in it with a pinch of the sugar, then mix in the rest of the sugar, salt, cardamom, eggs, and flour a cup at a time.
- Work the butter in last:
- Add the softened butter only once the dough has come together, then knead until smooth and elastic, 8–10 minutes. Adding fat after the gluten starts developing gives a richer, more tender crumb.
- Rise, braid, rise again:
- Let it double (about an hour). Divide in two, and each into three ropes; braid each loaf and tuck the ends. Let the braids proof until puffy, ~30–40 minutes.
- Wash and bake:
- Brush with egg wash, scatter pearl sugar and almonds, and bake at 375°F for 22–28 minutes until deep golden and hollow-sounding. Cool before slicing — barely.
Notes
Nisu vs. pulla Same bread, two names: nisu is the older western-Finland/Ostrobothnia term the emigrants brought to the U.P. and kept, while Finland at large moved to pulla. Hearing ‘nisu’ in a Michigan kitchen is a little linguistic time capsule.
Uses and kin Day-old nisu makes the best Trenary-Style Toast (Finnish Korppu) — slice it, sugar it, and dry it low. Shape the same dough into korvapuusti (cardamom-cinnamon rolls) if you’d rather.
