Turkey Sausage & Veggie Scramble

Savory, hearty, and high-protein. This feels like a restaurant breakfast. Great for weekends.

Ingredients

  • 3 large eggs
  • 2 oz lean turkey breakfast sausage (check label: <5g fat per serving)
  • ½ cup diced bell pepper

¼ cup diced onion

  • 1 cup baby spinach
  • 1 oz shredded part-skim mozzarella
  • 1 tsp olive oil
  • Garlic powder, paprika, salt, pepper

Directions

  1. Crumble and cook turkey sausage in a non-stick pan over medium heat until browned, about 5 minutes. Remove and set aside.
  2. In same pan, heat olive oil. Add peppers and onion. Cook 3–4 minutes.

Add spinach, stir until wilted, about 1 minute.

  1. Whisk eggs with salt, pepper, garlic powder, and paprika.
  2. Return sausage to pan. Pour egg mixture over everything.
  3. Stir gently as eggs set, pushing from edges toward center.
  4. When eggs are almost set, top with cheese. Cover for 1 minute to melt.

Notes

Prep all vegetables the night before — dice peppers and onion and store in a container. Morning cook time drops to 8 minutes.
