Ingredients
- 3 large eggs
- 2 oz lean turkey breakfast sausage (check label: <5g fat per serving)
- ½ cup diced bell pepper
¼ cup diced onion
- 1 cup baby spinach
- 1 oz shredded part-skim mozzarella
- 1 tsp olive oil
- Garlic powder, paprika, salt, pepper
Directions
- Crumble and cook turkey sausage in a non-stick pan over medium heat until browned, about 5 minutes. Remove and set aside.
- In same pan, heat olive oil. Add peppers and onion. Cook 3–4 minutes.
Add spinach, stir until wilted, about 1 minute.
- Whisk eggs with salt, pepper, garlic powder, and paprika.
- Return sausage to pan. Pour egg mixture over everything.
- Stir gently as eggs set, pushing from edges toward center.
- When eggs are almost set, top with cheese. Cover for 1 minute to melt.
Notes
Prep all vegetables the night before — dice peppers and onion and store in a container. Morning cook time drops to 8 minutes.
