Ingredients
- 6 oz (170 g) vanilla beans — Grade A Madagascar; buy online by weight
- 48 oz (1.5 L / about two 750 ml bottles) 70-proof (35% ABV) vodka
- A half-gallon jar with a tight lid — this is the Mother
A pint jar with a lid — this is the daily-use jar
- Extra beans and extra 70-proof vodka on hand for feeding

- Set up the Mother. Split 6 oz of beans lengthwise and put them in the half-gallon jar, then pour in 48 oz of 70-proof vodka. That’s the same 1 oz beans to 8 oz alcohol ratio as a small batch — just scaled up. Leave some headroom; don’t fill to the brim.
- Make sure every bean is fully submerged. Keep the beans fully submerged — always, forever, at every step of this. That is the one rule.
- Cap it, date it, and put it somewhere cool and dark. Let it age at least 10 weeks before you draw from it — longer is better, and three months to a year makes a real difference.
- Set up the daily-use pint. Once the Mother has aged, pour some off into the pint jar and keep that one by the mixer. Drop a bean in it too if you like. This is the jar you actually cook from.
Use the pint freely. That’s what it’s for.
- When the pint gets down to about a third left, top it off from the Mother.
- Then feed the Mother: add a bean (or two, depending on how much you drew) and more 70-proof vodka to bring it back up. Keep the 1:8 spirit of it — you’re not doing arithmetic here, you’re keeping it roughly in balance.
- Check that the beans in the Mother are still fully submerged after every feed. Top up with vodka if any are riding above the surface.
- Repeat forever. The Mother never gets emptied and never gets restarted — it just keeps deepening. Spent beans can stay in; add fresh ones as you go and the old ones keep contributing.
- Every so often, if the Mother has accumulated a lot of tired beans, pull the oldest ones out and bury them in a jar of sugar. That’s vanilla sugar, free.
Notes
Why it works: an aging Mother is always further along than any batch you’d start today, so the pint you cook from is always drawing on years of extract rather than weeks. The longer you run it, the better it gets — this is the whole point.
Don’t skip the first aging. Drawing off the Mother before about 10 weeks just gives you weak extract in two jars instead of one.
Keep the beans fully submerged. In the Mother, in the pint, always. A bean above the liquid line can mould, and that’s the only real failure mode in the whole system.
