Pasta Filata
Pasta filata means “spun paste,” and this is the only family defined not by what it’s made of or how long it’s kept, but by a single physical act: the hot curd is stretched.
It’s also the family with the narrowest window in cheesemaking. Everything else in this section tolerates being an hour late. This does not.
What the stretch actually does
Take a rennet curd at the right acidity, immerse it in hot water or whey, and work it — pull, fold, pull again. Under heat and mechanical work the casein molecules align into long parallel fibres, where before they were an unordered network.
That alignment is the cheese. It’s why a good mozzarella pulls into strings and peels in sheets like the grain of a cooked chicken breast, and why the same milk made into a cheddar does nothing of the kind.
🔴 The window, and why it exists
The curd will only stretch inside a narrow pH band — roughly 5.2 to 5.4 — and in practice that’s about twenty minutes wide. Miss it early and the curd tears; miss it late and it goes grainy and won’t come together at all.
The reason is the same calcium mechanism that governs melting, and it’s worth stating precisely because it explains both failures at once.
Calcium is what cross-links the protein network. As pH falls, calcium leaves the network and goes into solution. At around 5.2–5.4 the curd’s dicalcium paracaseinate converts to monocalcium paracaseinate — and that is the sweet spot, because you need:
- enough calcium dissolved that the rigid curd matrix can break up and the strands can move;
- enough calcium retained that the strands are still bonded to each other and can be drawn into fibres rather than falling apart.
Two failures, opposite causes:

This is the single best argument in the whole section for watching pH rather than a clock. Nobody hits a twenty-minute window reliably on elapsed time, because the time it takes depends on your milk, your culture, your dose and your kitchen. The old hands test it by dropping a piece of curd in hot water and pulling — if it stretches like taffy, go.
The members
Mozzarella. Fior di latte from cow’s milk, mozzarella di bufala from water buffalo — and the buffalo version is a genuinely different cheese, richer and softer, because buffalo milk carries far more fat and protein.
Burrata. Mozzarella made into a pouch and filled with stracciatella — shredded curd in cream. The outside is pasta filata; the inside is barely holding together. Absurd and wonderful.
Provolone. Aged pasta filata, which is unusual for this family. Hung in those characteristic shapes, and often made with lipase for the sharp piquant note — the piccante versions lean hard on it. Lipase is easy to overdo; this is the family that shows what it’s for.
Scamorza. Essentially a dried, sometimes smoked provolone-adjacent cheese. The smoked version belongs as much with the smoked and flavoured cheeses.
Caciocavallo. Aged, gourd-shaped, tied in pairs and hung over a pole — which is where the name comes from (“cheese on horseback”).
Oaxaca / quesillo. Mexico’s stretched cheese, wound into a ball like a skein of rope, pulled apart in strands to eat. Introduced by the same technique arriving in the New World and then going its own way.
Kashkaval. The Balkan and Middle Eastern branch — Bulgaria, Romania, Turkey — usually sheep’s milk, firmer and aged.
String cheese. Genuinely the same family and the same physics, whatever else you think of it. The strings peel because the fibres are aligned.
The one that isn’t
My first mozzarella wasn’t pasta filata, and this is the distinction I most misunderstood.
Milk, vinegar, salt, no rennet — that’s an acid-set fresh cheese shaped like a mozzarella. It’s excellent. But it has no continuous protein network to align, so it doesn’t truly stretch; it’s plastic and pliable rather than fibrous.
For years I assumed the cultured version was the same thing done properly. It isn’t. It’s a different material that shares a name, and the difference is structural, not a matter of skill.
Why so much of it is bad
Worth saying plainly, because it explains the supermarket.
Pasta filata is the most-produced cheese family on earth, largely because of pizza — and industrial production optimises for low moisture, long shelf life and predictable browning, all of which work against the qualities that make fresh mozzarella worth eating. A ball of good fior di latte and a block of low-moisture pizza mozzarella are both correctly named and are not really the same food.
The other reason: young cheese stretches, old cheese doesn’t. Proteolysis progressively cuts the long strands into shorter ones, so stretch is a property with a short life. A mozzarella is at its best within hours. This is a cheese you make and eat, not one you keep — which, given the rest of this section is about keeping, makes it a pleasant exception.
