  • 2 gallons whole milk β€” traditionally from whatever is milked: cow, yak, mare, camel, goat
  • A starter of soured milk or yogurt, OR your own soured whey

Salt, optional and to taste

  • Cheesecloth, and a rack or tray you can leave somewhere dry and moving

Salt

  1. Sour the milk. Culture it with yogurt or soured milk and hold it warm until it sets and tastes properly sharp β€” overnight is usual. ⭐ This is an acid-set cheese and there is no rennet anywhere in it.
  2. ⚠ Traditionally the butter comes off first. If you are working from whole milk, churn or skim the fat out. Fat is what goes rancid in a dried food, and the point of aaruul is that it does not.
  3. Heat the soured milk gently until it separates, then strain it through cheesecloth.
  4. Press out as much liquid as you can and let it drain for several hours.
  5. πŸ”΄ Now shape it β€” and the shape is the technology. Roll or press the curd flat, then cut it into small pieces, thin bricks, batons or rounds. ⚠ Thin. Everything about this cheese is arranged to give the air as much surface as possible; a thick lump will sour in the middle before it dries.
  6. Dry them in moving air, out of direct rain, turning daily β€” traditionally on a rack or a cloth, or on the roof. Days to weeks, depending on the weather, until they are hard right through and rattle on the tray.
  7. Store them dry. They keep for years, and that is the entire point of the food.
  8. What right looks like: pale, chalky, extremely hard pieces with no give at all, intensely sour and milky. You suck them rather than chew them, often in tea.

Notes

Where this recipe came from β€” and what it is not πŸ”΄ UNTESTED, and it is worth being honest that this recipe is easy to do and very hard to reproduce: the traditional product is dried in the wind and sun of the steppe, at low humidity, and a damp kitchen will simply spoil it.

⭐ The cheese that answers the question with subtraction Almost every cheese in this collection preserves milk by adding something β€” rennet, cultures, salt, smoke, mould, brine, a rind. ⭐⭐ Aaruul preserves it by taking things away: the fat is removed because fat goes rancid, and the water is removed because water is what spoils. What is left is protein and acid, and nothing that can go off. It is the logical end of the argument the extra-hard cheeses make about moisture, taken to its limit by people with no cave and no reason to want one.

⭐ The spine of these last cheeses: surface area Aaruul is a brick. Chhurpi is a baton. Rushan is a sheet wound on a stick. Tenili is a thread. Four cultures, none in contact with the others, all shaping dairy to expose as much surface as physically possible β€” because that is how you dry milk when there is no refrigeration and the winter is long.

⭐⭐ And then TΓͺte de Moine does exactly the same geometry for the opposite reason β€” shaved into rosettes so that more of it meets the air and it smells more of itself. The same idea used four times to keep cheese alive and once to make it taste better.

⚠ On the names Aaruul Β· qurut Β· kurut Β· chhurpi Β· kalti β€” different languages, one idea, across Mongolia, Central Asia, Tibet, the Himalaya and the Caucasus. ⚠ They are not identical products β€” the milk, the salting and the shaping vary β€” but treating them as a family is more useful than treating them as five unrelated cheeses.
