Cheese, Tête de Moine-Style
⚠ **UNTESTED.** A briefing. A small, dense, strongly flavoured cylinder from the **Bernese Jura**, monastic in origin — and **the only cheese in this collection whose serving method was invented in living memory.** 🔴 **You do not slice it. You shave it**, in a rotating cut across the top of the cylinder, into thin ruffled curls called **rosettes.** ⭐⭐ **And the tool is younger than the cheese by centuries.** In **1982, Nicolas Crevoisier invented and patented** a spike-and-swinging-blade device for it and named it the ***girolle***, after the chanterelle mushroom the shavings resemble. **The cheese was a minor regional product; the tool turned it into an export.** ⭐ **The shaving is not showmanship.** A rosette has enormously more surface than a slice of the same weight, so far more of the cheese meets the air at once — **and it smells and tastes markedly stronger for it.** Same geometry as [the dried cheeses](/recipes/cheese-aaruul/) on this page, used for pleasure instead of preservation.

Ingredients
- 3 gallons whole raw milk (not ultra-pasteurised)
- 3/8 tsp thermophilic culture — see Cheese Culture, Thermophilic Mother
- 3/4 tsp calcium chloride solution, if the milk is shop-bought
- 3/4 tsp liquid rennet, single strength, diluted in 1/4 cup cool unchlorinated water
- Saturated brine — see Cheese Brine, Saturated
- 1 quart 3% brine, for washing the rind
Directions
Key ingredients
- Warm the milk to 90 F / 32 C and add the thermophilic culture. Ripen 30-45 minutes.
- Rennet at a flocculation multiplier of 2.5 to 3, for a firm set.
- Cut to 1/4 inch — fine — then fore-work 10 minutes before applying heat.
- Cook to 115-120 F / 46-49 C over 30 minutes, stirring, then hold 30 minutes more. ⚠ Hot, but not as hot as a Gruyère — this is a smaller, denser, moister cheese than an alpine wheel.
- 🔴 Mould it TALL. Drain into a straight-sided cylindrical mould — taller than it is wide. ⭐ The shape is not cosmetic: the girolle works by shaving the flat top of a cylinder, and a wide flat wheel cannot be shaved that way at all.
- Press: ~10 PSI for 1 hour, flip and redress; ~20 PSI for 12 hours.
- Brine 8-12 hours per pound, flipping partway through.
- Age at 54-59 F / 12-15 C, 90-95% RH, for a minimum of 75 days, washing or brushing the rind with 3% brine weekly. It carries a real washed rind and it wants the attention.
- ⭐ To serve, shave it. Take the top off the cylinder, mount it on a girolle, and turn the blade to lift rosettes. ⚠ If you have no girolle, shave it thin with a sharp blade rather than slicing it — the effect is mostly the thinness, and a thick slice genuinely does taste milder.
- What right looks like: a dense, pale-gold paste with a firm brownish washed rind, and a flavour far stronger than the size of the cheese leads you to expect.

Where this recipe came from — and what it is not 🔴 UNTESTED. 🔴 And this is not Tête de Moine AOP, which comes from a defined part of the Bernese Jura and carries a minimum ripening of 75 days.
⭐⭐ The tool that rescued the cheese, and the second one in this collection The girolle was invented and patented by Nicolas Crevoisier in 1982 and named for the chanterelle. Before it, Tête de Moine was a minor regional cheese; after it, the cheese travelled. ⭐ That is the second time in this programme that an implement turns out to be far younger than the food it serves — the Norwegian ostehøvel was patented in 1925, from the woodworking plane on a carpenter’s bench. Two Alpine-and-Nordic cheeses, two twentieth-century gadgets, and in both cases the gadget is what made the cheese famous.
⭐ Why shaving actually changes the taste It is not theatre. A rosette exposes a great deal more surface per gram than a slice, so more of the volatile aroma leaves the cheese and reaches you at once, and the thin ruffled texture melts differently on the tongue. ⚠ Try it both ways from the same cheese — the difference is much larger than it has any right to be, and it is the most easily verified claim on this page.
⭐ The spine of these last cheeses: surface area Aaruul is a brick. Chhurpi is a baton. Rushan is a sheet wound on a stick. Tenili is a thread. Four cultures, none in contact with the others, all shaping dairy to expose as much surface as physically possible — because that is how you dry milk when there is no refrigeration and the winter is long.
⭐⭐ And then Tête de Moine does exactly the same geometry for the opposite reason — shaved into rosettes so that more of it meets the air and it smells more of itself. The same idea used four times to keep cheese alive and once to make it taste better.
