Coffee Syrups

They are trivially easy to make, genuinely worth making, and surrounded by more confidently-repeated nonsense than almost anything else in the coffee aisle.

First, a disambiguation

In most of the country “coffee syrup” means what this page is about: a flavouring syrup — vanilla, caramel, hazelnut — that you add to coffee. In Rhode Island it means the opposite, and they were there first. New England coffee syrup is a coffee-flavoured syrup you stir into cold milk to make coffee milk, which has been Rhode Island’s official state drink since 1993. Autocrat is the famous brand. It’s a fine thing and it is not this thing: one is a flavour you put into coffee, the other is coffee put into milk. If you go searching for pictures of “coffee syrup,” Rhode Island is what you’ll get.

What it is

A coffee syrup is a concentrated sugar solution carrying a flavor. Torani’s vanilla is a short list — pure cane sugar, water, natural flavors, citric acid, potassium sorbate, sodium benzoate — and there is nothing exotic in it. Roughly speaking it sits near a 1:1-by-weight syrup, around 50–55 °Brix (Torani doesn’t publish a Brix figure; that’s an estimate derived from the nutrition panel, so treat it as approximate rather than a spec).

The sugar-free bottle is where the formulation gets interesting, and it gives away something important. Torani’s sugar-free vanilla reads: water, natural flavors, acesulfame potassium, citric acid, potassium sorbate, sodium benzoate, xanthan gum, sucralose. Sugar is gone — and xanthan gum has been added back. That gum is not a flavor. It’s there because sugar wasn’t only the sweetener, it was the body, and when you remove it you have to put the texture back with something else. The label tells on itself.

Why cafés use syrup instead of sugar

The usual explanation is that “sugar won’t dissolve in cold coffee.” That is false as stated, and the numbers aren’t close. Sucrose solubility in water at 0°C is about 179 g per 100 g of water. Two teaspoons of sugar in a 12 oz iced coffee sits roughly seventy times below saturation. The sugar dissolves fine.

What’s actually true is that it dissolves slowly — it’s a rate problem, not a solubility problem. Cold water is viscous and the molecules move sluggishly, and nobody stirs an iced latte for four minutes. Syrup is already in solution, so it disperses instantly. The other two reasons are unglamorous and probably matter more to a café than the chemistry: a pump delivers a consistent dose every time, and it’s faster in a rush. Say “rate-limited,” not “insoluble” — the distinction is the difference between understanding the ingredient and repeating a slogan.

History & origin

Torani is the anchor of the American story and the well-documented part: founded in 1925 in San Francisco’s North Beach by Rinaldo and Ezilda Torre, working from recipes they’d brought from Lucca, and selling flavor-plus-soda-water Italian sodas to the neighborhood. (Ezilda has a footnote she deserves: at Repeal in 1933 she became one of the first women licensed as a rectifier of distilled spirits in the United States.)

Monin is older as a company and younger as a syrup makerGeorges Monin founded it in Bourges, France, in 1912, but he was making wine and cordials; the syrups came later, in the late 1920s and early ’30s. It’s worth getting that right, because “Monin, syrups since 1912” is a tidy line that isn’t true. DaVinci Gourmet is the Seattle entry — founded 1989 by chocolate maker Greg Davenport, bought by Kerry Group in 2003, still made in Seattle.

The 1982 flavored-latte story deserves a flag. The tale goes that in 1982 a retired coffee man named LC “Brandy” Brandenburg walked into Caffe Trieste in North Beach, saw the Torani bottles behind the bar, suggested putting the syrup into espresso, and sealed the world’s first flavored latte on a handshake. It’s a lovely story and it’s repeated widely — but every retelling traces back to Torani, and no contemporaneous 1982 documentation appears to exist. Wikipedia carries the claim with a citation needed; Torani’s own copy hedges, saying its vanilla “is used in the first flavored latte” while naming neither the café nor the person.

And the commercial numbers argue the moment came later regardless: Torani’s vanilla went from about 1,500 cases in 1990 to 17,000 in 1991 after Brandenburg sampled a Portland espresso cart. Starbucks put espresso on the menu in 1984; Monin entered the US in the early ’90s; Seattle was latte-saturated by 1993. The honest framing is that 1982 is a contested origin anecdote, and the flavored latte became a category around 1990–93.

Sugar-free, honestly

The sweetener systems vary by brand and it isn’t what most people assume: Torani’s classic sugar-free is sucralose plus acesulfame-K; Torani Puremade Zero is monk fruit and erythritol; Monin’s sugar-free is erythritol and sucralose. Aspartame is essentially absent from the category — which is no accident, since aspartame genuinely does break down with heat.

Sucralose is the heat-stable choice, and it is worth being careful here rather than alarming: a 2015 study found sucralose degrading and discoloring at 85–90°C held for an hour, forming chlorinated byproducts. A latte is roughly 65–70°C and brief. Those study conditions are meaningfully harsher than a coffee drink, and it’s dishonest to turn a baking-relevant finding into a latte scare.

The defensible criticism of sugar-free syrup is texture, not safety. Sugar is the bulking agent that governs viscosity and mouthfeel; sucralose replaces the sweetness and nothing else, leaving what the food-science literature calls a viscosity void, along with a bitter, slightly astringent finish. That’s why the hydrocolloid shows up on the label — maltodextrin would work too, but it would put the calories back. You can watch this argument play out on the back of the bottle: that xanthan gum is the patch.

Make your own

This is a ten-minute ingredient, and it is one of the better returns on effort in the kitchen.

Start with the base. 1:1 by weight (equal sugar and water, ~50 °Brix) is the everyday syrup — dissolves cold, doesn’t bulldoze the coffee. 2:1 “rich” (~66.7 °Brix) is denser, dilutes the drink less, and keeps longer. Measure by weight, not volume: a cup of sugar weighs less than a cup of water, so 1:1 by volume is really about 46 °Brix. And a genuinely counterintuitive fact worth knowing — rich syrup is not twice as sweet as simple. It’s only about 1.35× as sweet, so 10 mL of rich ≈ 13.6 mL of simple. People routinely over-correct when they switch.

Getting flavor in has three routes. Infusion — a split vanilla bean, cinnamon stick, citrus zest, or whole coffee beans steeped in the hot syrup — is the best of them for whole spices. Extract goes in off the heat, always: the volatiles and the alcohol carrying them will flash off if you add it to a simmering pot. See Vanilla Extract if you’d rather make that end of it too. Fruit purée is the one to be wary of — it adds water, protein, and enzymes, which drops the Brix, raises the water activity, and shortens the shelf life sharply.

Why yours won’t keep like theirs

Here is the myth worth killing: “rich 2:1 syrup is self-preserving” is not true, and the numbers are unambiguous. What governs microbial growth is water activity (a_w), and sucrose solutions land like this:

  • 50.0% sucrose (1:1 by weight) → a_w 0.927
  • 58.3% → 0.900
  • 64.3% → 0.876
  • 66.7% (2:1 rich) → a_w 0.860 FDA treats a_w of 0.85 or below as the line where a food generally doesn’t need refrigeration for safety. Neither syrup gets there. 1:1 at 0.927 is sitting comfortably in bacterial territory. Rich syrup at 0.860 is just barely over the line — better, not safe. And molds and osmophilic yeasts grow all the way down to 0.60–0.65, which is why both of them will eventually mold. Sugar slows spoilage. It does not make syrup shelf-stable.

So: refrigerate it, and expect weeks, not months. Being straight with you, the published guidance genuinely conflicts — hobby sources put 1:1 at 2–4 weeks and 2:1 anywhere from 6 weeks to 6 months, and there doesn’t appear to be an extension-service or FDA figure for homemade flavored syrup at all. That spread is too wide to paper over with a confident number, so learn the mechanism instead: higher sugar keeps longer, fruit keeps worst, and you throw it out on cloudiness, mold, or an off smell rather than on a date. A tablespoon of vodka per two cups helps modestly; it’s a small ethanol dose, not a preservative system.

Why the commercial bottle wins is now obvious: potassium sorbate and sodium benzoate, plus citric acid to drop the pH low enough for the benzoate to actually work. That’s an antimicrobial system. Your syrup has none.

The flavors worth knowing

Vanilla is the one that started the category and the one that broke out commercially. Worth noting: Torani’s vanilla declares natural flavors, not vanilla extract.

Caramel carries a real distinction that most “caramel” products blur. True caramel requires cooking sugar to 320°F/160°C or above, where sucrose thermally decomposes into hundreds of new aromatic, bitter, and colored compounds. Brown sugar is not caramel — it’s sucrose with molasses added back, and no pyrolysis has happened at all. Caramel color is a coloring agent with little flavor to speak of. Also don’t conflate Torani’s caramel sauce (which declares dairy and soy) with its caramel syrup — different products.

Hazelnut is where a common reassurance becomes a genuine hazard. “Hazelnut syrup is just flavoring, there are no actual nuts in it” is brand-dependent and wrong for Torani, whose own allergen list declares Hazelnut → hazelnut, and Classic Hazelnut → hazelnut and peanut. Monin, by contrast, states its hazelnut line is allergen-free. A few others on Torani’s list are easy to miss: Crème Caramel → walnut, Butter Pecan → peanut, Almond Roca → dairy and coconut. Never give the generic “it’s all synthetic” answer to someone with a nut allergy — and note that the allergen document behind these specifics was last revised in 2019, and Monin explicitly says the back label governs. Brown sugar and cinnamon are the easy homemade wins — brown sugar brings molasses depth (not caramelization), and cinnamon is a natural infusion candidate.

A footnote: gomme syrup

If you go down this road you’ll meet gomme (or gum syrup) — a very high-ratio syrup with gum arabic, the acacia exudate, dissolved into it. The gum suppresses crystallization and lowers surface tension, giving a rounder, almost silky mouthfeel. The joke of it is that most bar “gomme” sold today contains no gum at all; the name outlived the ingredient.

Substitutes (if absolutely necessary)

  • Plain simple syrup — 1:1 sugar and water. Sweetens without flavoring, dissolves cold, and is the honest substitute in an iced drink.
  • Granulated sugar — works fine in a hot drink, where it dissolves quickly. In an iced one it will sit at the bottom unless you stir with real commitment (it will dissolve — see the page; it’s slow, not insoluble).
  • Maple syrup or honey — not neutral, and that’s the point: both bring their own flavor. Excellent in coffee if you want what they taste like.
  • Sweetened condensed milk — not a substitute so much as a different drink, and a very good one. See Sweetened Condensed Milk.
  • Flavored beans or a dash of extract — if what you’re chasing is the aroma rather than the sweetness, a drop of extract in the cup gets you most of the way.

Where to find it

  • Local store: Torani is in most US grocery chains; DaVinci and Monin turn up in restaurant-supply stores and larger markets. The 750 mL glass bottle is the standard.
  • Online: the full flavor range, plus the pumps — and a pump is the difference between a consistent drink and a guess.
  • Restaurant supply: the best price per ounce if you’re actually going through it, and where the pumps live.
  • Make your own: genuinely worth it, and better than the bottle for anything you’d infuse. 1:1 sugar and water by weight, flavor by infusion or off-heat extract.
  • Storage: an unopened commercial bottle is shelf-stable; once opened, most makers say refrigerate. Homemade goes in the fridge from minute one and gets used in weeks — its water activity is nowhere near shelf-stable, whatever the ratio. Discard on cloudiness, mold, or an off smell.
