Making Cheddar & the Hard Pressed Cheeses

Cheddar, Cheshire, Lancashire, Caerphilly, Yarg. The family I’ve made most of, and the one where the defining step is a verb.

The one thing: cheddaring is not pressing

To cheddar is a specific operation, and it happens after the whey is gone and before the cheese goes anywhere near a press.

You drain the vat, let the curd knit into a solid slab, cut that slab into blocks, and then stack and re-stack the blocks, turning them, for one to two hours while they sit in their own warmth. The weight of the pile squeezes whey out; the acid keeps developing; and the curd’s texture changes completely.

The texture is the instrument. At the start you have a mass of fused curd. By the end you have something that tears into fibres and looks, unmistakably, like cooked chicken breast. When it does that, you’re done — not when the timer says so.

What it buys you: a low-moisture, acid, fibrous curd that will press into a dense body and age for years. And what it costs is the sweetness — this is the family that doesn’t wash the curd, so the bacteria eat all the lactose they can find and the cheese finishes at pH 5.0–5.2. Sharp, close-textured, and it snaps rather than bends.

The make, step by step

1. Milk and culture. Two gallons if you can — this family rewards a bigger wheel — at 86–88 °F / 30–31 °C. Mesophilic culture, 45–60 minutes to ripen. Calcium chloride for shop milk; annatto if you want it orange.

2. Rennet, floc multiplier 3. A firm set.

3. Cut to ⅜ inch, rest 5 minutes, then stir gently while raising to 100–102 °F / 38–39 °C over about 40 minutes. Slowly — fast heating shrinks the outside of each curd piece and traps whey inside it.

4. Hold and stir 30–45 minutes at temperature. The curd should be firm, springy, and shrink to about the size of a bean.

5. Drain, and let it mat. Pour off the whey and let the curd settle into a slab in the bottom of the pot, kept warm at 100 °F. Give it 15 minutes to knit.

6. Cheddar it. Cut the slab into blocks about 4 inches wide. Stack two high, turn every 15 minutes, and re-stack three high after the first half hour. Keep it at 100 °F throughout — a water bath, or the pot back over the lowest possible heat, or the oven with the light on.

Total: 90 minutes to 2 hours, until it tears in fibres.

The pH at the end of cheddaring should be around 5.2–5.4.This is the single best place in the whole section to own a pH meter, because “chicken breast” is a real instrument but a slippery one, and the number tells you whether your hand is right.

7. Mill. Tear or cut the slabs into pieces about the size of your thumb. Not smaller — fine milling loses fat and fines at the next step.

8. 🔴 Salt the curd, not the wheel. This is the family’s other signature and the reason a cheddar never sees a brine.

Weigh the milled curd and add 2–2.5% of its weight in salt, in three additions, stirring gently and waiting 5 minutes between each. The curd will release more whey and the pieces will stop sticking to each other.

Salting the curd directly means the salt is even through the body from minute one, which a brine can never achieve on a dense cheese — and it stops the acid where you want it stopped, right then, rather than over the following day. It’s also why a cheddar can be pressed immediately and a gouda cannot.

9. Press hard, in stages, with the curd still warm:

  • ~10 PSI for 15–30 minutes, then unwrap, flip, redress the cloth
  • ~20 PSI for 12 hours, flip and redress
  • ~40–50 PSI for 24 hours

Warm curd knits; cold curd doesn’t. If the milling and salting have taken a while, the curd may need a few minutes back over warm water before it goes in the mould.

Those PSI figures are pressure on the follower. On a 6-inch follower, 10 PSI is 283 pounds, which is why lever presses exist and why “press with a gallon of water” is not the same instruction.

10. Dry and finish. Air-dry 2–5 days until the surface is dry and slightly leathery, then choose:

  • Wax — seals it, no rind care, no weight loss, and less flavour development
  • Bandage (larded cloth) — a natural rind, real evaporation, real weight loss, and the traditional route to the complex ones
  • Vacuum bag — the modern compromise, closer to wax in effect

The rind page has the full trade-off. The short version is that sealing keeps moisture and loses complexity, and bandaging does the reverse.

11. Age at 50–55 °F / 10–13 °C. Three months is a mild cheddar; six to nine is where it gets interesting; twelve to twenty-four months is where the tyrosine crystals and the deep flavours arrive.

What “right” looks like

A close, dense paste that breaks cleanly and doesn’t bend.

A clean sharpness that builds, rather than a sour hit. Sour on a young wheel usually means it went too far down the acid curve before you salted.

Weight loss, if you bandaged it. A bandaged wheel should be measurably lighter after six months. That’s water leaving, and it’s where the concentration of flavour comes from.

What goes wrong

Acid, sour, and slightly bitter. Over-acidified — the cheddaring ran too long or too warm before salting. The salt is the brake; apply it earlier next time.

Dry, crumbly, cracks in the paste. Over-pressed, or the curd was too cool when it went in, or the cave is too dry. A cheddar wants ~85% RH; the numbers page has the targets and the failure table.

It never knits — visible curd junctions in the finished wheel. Curd was cold at pressing, or under-pressed, or milled too small.

Bitterness. Excess rennet first, then the culture, then over-long aging on a wheel that acidified too far.

Mould under the wax. Not dried long enough. Same lesson as everywhere else in this section.

The members, and what changes

Cheddar. The base make. And 🔴 worth being clear about: “cheddar” is not a protected name anywhere — which is exactly why it is the most-made cheese on earth and why the word tells you almost nothing about what’s in the packet. West Country Farmhouse Cheddar is protected; plain cheddar isn’t.

Cheshire. Saltier, crumblier, higher-moisture, and cheddared much less — a shorter, gentler version of the same sequence. Traditionally coloured or white, and the crumble is the point.

Lancashire. Traditionally made by blending two or three days’ curd — a working solution to small herds that turned into a defining characteristic. That’s a pattern this section runs into constantly: a constraint became a style.

Caerphilly. Young, high-moisture, brined rather than curd-salted, and eaten at a few weeks. The outlier that shows how much of the family definition is really about aging intent.

Yarg. Wrapped in nettle leaves, which grow a mould rind of their own — one more entry in the “the vessel is an ingredient” ledger the world tour kept filling.

Where I stand

This is the family I’ve actually made, plural and aged, and it’s the reason the press and the cave stopped being aspirations and became equipment. Cheddar is what needed the press, the wheel-turning, and the patience.

I’d say two things to somebody starting here.

First, it’s a long day. Between the cook, two hours of cheddaring, milling, salting and dressing the press, a cheddar is a genuine six-to-eight-hour make, and it’s front-loaded — you can’t leave it for an hour in the middle.

Second, it’s the family where a pH meter changes the most. Everywhere else in this section the meter is a nice-to-have. Here you have two decisions — when to stop cheddaring and when to salt — that are both pH decisions being made by feel, and both of them determine the cheese.

The formulas

All eight are written — and ⭐ this is the only batch in the recipe program where the family is actually mine.

The three cheddars, which are the same cheese to the moment it leaves the press and three different cheeses by the time you eat them:

  • Cheese, Cheddar (Waxed) — sealed. No rind care, no weight loss, and no complexity from either
  • Cheese, Cheddar (Clothbound) — 🔴 the bandage is an evaporation decision, and the weight it loses is the flavour. ⭐ Make both from one vat — it’s the cheapest experiment in the section
  • Cheese, Cheddar (Smoked) — cold only, below 90 °F, and then you wait a fortnight before judging it

The territorials, each stopping the cheddar sequence somewhere different:

  • Cheese, Cheshire — ⚠ and a salt-pasture terroir story I refused to print as fact, because the recipe already explains everything the story is asked to
  • Cheese, Lancashire — ⭐⭐ two or three DAYS’ curd blended, and 🔴 the famous “Crumbly” version is the modern one that isn’t traditional at all
  • Cheese, Caerphilly — the outlier: brined, not curd-salted, and eaten at three weeks
  • Cheese, Yarg (Nettle-Wrapped) — 🔴 created in the 1980s. Yarg is Gray backwards. The cleanest case of invented heritage here, and nobody lied — the appearance did the work
  • Cheese, Double Gloucester — 🔴 the famous one is unprotected and the obscure one has a PDO, because Single Gloucester’s designation is doing conservation work on a rare cattle breed

And a third instance of the same constraint. Lancashire’s multi-day curd, Gorgonzola’s due paste and Morbier’s soot line are three separate regional answers to one piece of arithmetic: a small herd cannot fill a vat in a single milking. The constraint is gone; the cheeses are still shaped like it.

On the cheddars specifically: I make them, and I have never written down which finish I use, how long I go, or what the best one was. So the numbers in those three recipes are the standard ones, not a reconstruction of mine — and that is exactly what the story marker below is waiting for.

But two auxiliaries every make on this page needs are written: Cheese Culture, Mesophilic Mother and Cheese Brine, Saturated — and the brine one is the more important of the two, because a plain salt brine takes a good cheese apart in about a week.
