Making Brined & Pickled Cheese
Feta, halloumi, telemea, nabulsi, Domiati, sirene, mish. Cheeses that never form a rind, because they spend their whole lives underwater.
The family page covers who they are. This page is the make — and the best way into it is that two of these cheeses sit in the same bucket of brine and both refuse to melt, for exactly opposite reasons.
The one thing: feta and halloumi diverge at the pH
From the melting page, which is worth reading before this one: calcium cross-links hold a protein network rigid, and pH decides how much calcium stays bound.
Halloumi is made with little or no starter culture. It’s essentially a rennet-set curd, finished fast, at a high pH with its calcium intact. Heavily cross-linked, so it browns and squeaks and holds its shape.
Feta is cultured, drained slowly, and taken well down the acid curve — and in doing so it loses most of its colloidal calcium phosphate. No cross-links left, and no rennet network to speak of, so it softens and falls apart.
⭐ Same family, same brine, opposite ends of one axis. Which is also the practical warning: substituting feta for halloumi in a grilling recipe fails, and fails differently from substituting it for cheddar in a sauce.
🔴 And the brine is not storage — it is the aging environment
This is the thing that catches people. A brined cheese has no rind, so there’s no barrier between the liquid and the paste. Whatever is in the brine is in equilibrium with the cheese, permanently.
Which means a plain salt brine will take calcium out of the cheese — the concentration gradient runs that way — and the surface turns slippery, then soft, then to mush. That’s not spoilage, it’s chemistry, and it happens to a perfectly good feta in about a week.
A brine for storing cheese needs three things:
- Salt at the strength the cheese wants — 7–8% for feta, up to saturated for shorter holds
- Calcium chloride, around 0.5%, so the gradient isn’t one-way
- Acidification — a splash of vinegar or a little whey, to bring the brine near the cheese’s own pH rather than well above it
The brines page makes the same point about every brine in this section, and it’s the one sub-recipe I’d call not optional.
The feta make, step by step
1. Milk. A gallon at 86 °F / 30 °C. Sheep if you can get it, goat if you can’t, cow if you must — this is the family where the milk shows most. Mesophilic culture, 60 minutes. Lipase if you want the pungency the traditional cheese has, and go light: too much reads as rancid rather than piquant.
2. Rennet, floc multiplier 3. A clean firm set.
3. Cut to ½ inch. Rest 10 minutes. Stir gently for 20 minutes at the set temperature — no cook at all. Feta is a high-moisture cheese and the whole make is arranged to keep it that way.
4. Drain in the mould, unpressed. Straight-sided moulds on a mat. Flip after 30 minutes, then hourly for four or five hours, then leave it overnight at 68 °F / 20 °C. The wheel drains and acidifies at the same time, which is the point.
5. Cut and dry-salt. Cut the block into pieces, salt the surfaces generously, and leave them on a rack for 24 hours, turning. The surfaces will weep hard.
6. Into the brine. 7–8% salt, 0.5% calcium chloride, acidified, at cave temperature. Fully submerged — a piece sticking out of the brine grows things.
7. Age at least 30 days, and it’s better at two to three months. It gets saltier and sharper the whole time; you can move it to a weaker brine to hold it where you want it.
The halloumi make, and the step that makes it halloumi
Same start — but no culture, or barely any. Milk at 90 °F, rennet, floc multiplier 3, cut to ½ inch, stir 20 minutes, drain and press lightly for an hour.
And then you cook the curd in its own whey.
Bring the reserved whey to 190 °F / 88 °C and slip the pressed blocks in. They sink. After 30–45 minutes they float — and that is the signal, and the whole cheese.
That cook denatures and cross-links the protein so thoroughly that the network can no longer flow under heat. Everything halloumi is famous for is downstream of those forty minutes.
Then: lift out, salt while hot, fold a mint leaf into each block as it cools (the traditional version, and the mint was originally an antimicrobial as much as a flavour), and brine.

What “right” looks like
Feta: firm enough to slice, crumbly at the edges, sharp and salty, and it should smell clean and lactic rather than sour.
Halloumi: dense, rubbery in the hand, and it should squeak against your teeth. That squeak is the intact protein network resisting you, and it is the direct sensory readout of everything on this page.
The brine should stay clear. Cloudy brine, or a slimy film, means it’s time to change it.
What goes wrong
The surface went slippery and then mushy. No calcium in the brine. The commonest failure in this family by a distance.
It’s too salty to eat. Move it to a weaker brine — this is one of the few reversible mistakes in cheesemaking. It’ll equilibrate over a few days.
Halloumi that never floated. Whey not hot enough, or the blocks were too thick. It’ll still be a cheese; it just won’t grill.
Halloumi that melted anyway. Some culture got in, or the curd acidified while you were pressing. The high pH is the mechanism — protect it by working fast.
Bitter feta. Excess rennet or excess lipase.
A yeasty, gassy brine. Contamination. Discard the brine, rinse the cheese, make a fresh brine, and check your sanitation.
The members, and what changes
Feta. The PDO is Greek, sheep’s milk or sheep with up to 30% goat, made in defined regions. The ECJ settled that in 2005 by rejecting Denmark’s argument that feta was a method rather than a place — which is the exact argument the Dutch use for Boerenkaas, accepted there and refused here.
Telemea. Romanian, brined, often smoked afterwards.
Nabulsi. Palestinian, boiled in brine with mahlab and nigella — a different route to the same non-melting result as halloumi.
Domiati. Egyptian, and structurally the odd one: the salt goes into the milk before the rennet, at 5–15%. That changes the coagulation itself rather than the storage, and it’s one of the clearest examples of the world tour’s finding that the “rules” of cheesemaking are regional habit.
Sirene. Bulgarian, the same argument as feta with a different flag on it.
Mish. Egyptian, layered with salt in an earthenware jar and then filled with buttermilk and sour milk — aged for a year or more, and the strongest thing in the family.
Where I stand, and a position I hold
I’ve made feta from cow’s milk and from goat’s milk, and I’ve come down firmly on one side: a good feta should be goat’s milk, and goat is all I normally use now.
I’ll be honest that this is a preference rather than an appeal to authority — the PDO says sheep, or sheep with up to 30% goat, so the traditional definition doesn’t agree with me. But the goat version has a tang and a clean sharpness the cow version doesn’t, and once I’d made both side by side there wasn’t much argument left as far as my kitchen is concerned. That difference is largely the fatty-acid profile of goat milk rather than anything I did.
The formulas
All seven are written, with quantities and timings:
- Cheese, Feta — the one I actually make, and the one that goes furthest down the acid curve.
- Cheese, Halloumi — the whey cook, the float that tells you it’s done, and a protected name that describes a cheese which doesn’t exist yet.
- Cheese, Sirene — the same axis as feta, stopped earlier, and the one cheese here that wants a different culture.
- Cheese, Telemea — the one that gets pressed, which is why it slices where feta crumbles.
- Cheese, Nabulsi — where the brine is the recipe, and the cheese is finished by whoever eats it.
- Cheese, Domiati — salt into the milk before the rennet, and the only cheese here that never waits for salt to travel.
- Cheese, Mish — not a cheese you make so much as a jar you keep.
And the two auxiliaries. Cheese Culture, Mesophilic Mother — ⚠ correct for this family, unlike the alpine and grating pages, though sirene is the exception and wants the thermophilic one. And Cheese Brine, Saturated, which is the more important of the two: it carries the storage formulation as well as the salting one, and a plain salt brine takes a good cheese apart in about a week.
