The least interesting page in this wing and the one I’d least like you to skip, because everything else here is about deliberately creating ideal growth conditions and then walking away for months.
You are not sterilising. You are choosing which organisms get that opportunity.
Clean first, sanitise second
These are two different jobs and people conflate them.
Cleaning removes the soil — milk residue, fat films, protein deposits. Hot water and a detergent suited to dairy, and physical scrubbing. A sanitiser applied over a milk film mostly sanitises the film.
Sanitising then reduces the organisms on an already-clean surface.
Milk fat leaves a film that ordinary washing-up misses, especially on plastics and on anything textured. If a surface feels the least bit slick after washing, it isn’t clean yet.
What to sanitise with
A no-rinse acid sanitiser is what most cheesemakers use, and the practical standard is the Star San / Saniclean family — acid-based, food-grade, dairy-certified.
For cheesemaking the dilution is 2 teaspoons (⅓ oz) per gallon of water, with a contact time of about 30 seconds. That’s a stronger mix and shorter contact than the brewing dose, which is worth knowing if you’re working from brewing instructions.
And it’s genuinely no-rinse — which is not laziness. The acid residue keeps working for hours, so a sanitised surface stays hostile through your whole make rather than only at the moment you sprayed it.
Keep a spray bottle of it made up. It’s the single easiest habit to adopt.
🔴 Never mix acid sanitiser with anything chlorinated
Mixing an acid sanitiser with a chlorine sanitiser or a chlorinated cleaner produces a harmful gas.
That’s not a “may affect performance” warning. Don’t do it, don’t do it in sequence in the same sink without rinsing thoroughly between, and don’t store them where a spill could combine them.
Which is one of two separate chlorine problems in cheesemaking, and they’re easy to conflate:
- Chlorine plus acid sanitiser = dangerous gas. A safety issue.
- Chlorine deactivates rennet. A cheesemaking issue — which is why you dilute rennet in cool, unchlorinated water. If your tap water is chlorinated, that includes your tap water.
Different problems, same element, both worth remembering.
Material notes
Acid sanitiser is fine on plastic and stainless steel. Minimise prolonged exposure to rubber and soft metals, since it’s acidic — don’t leave gaskets soaking overnight.
And the non-reactive rule from equipment applies here too: chipped enamel is a sanitation problem as well as a chemistry one, because a chip is a place organisms live that you cannot scrub.
The things that actually get contaminated
Where problems come from, roughly in order of how often:
Cloth. Muslin holds milk fat and is reused. Boil it; don’t rely on a wash with detergent, and don’t put it away damp.
Wooden anything. Boards, moulds, shelves. Wood is porous and cannot be sterilised — which is fine, because in a cave wood is part of the ecosystem, but it does mean shelves need taking out and cleaning several times a year.
Your hands, obviously, and especially when working curd by hand — pasta filata, cheddaring, filling moulds.
The cave itself. Standing water is the recurring villain, and a puddle is a habitat.
And post-processing surfaces, which matters more than people realise: the Listeria research that undercuts the 60-day rule is specifically about post-processing contamination — organisms arriving on the cheese after the make, from a surface, a cloth, a hand or a cave. Pasteurising the milk would not have prevented it. Your cleanliness after the vat matters as much as the milk you started with.
The honest risk picture
I’m not going to be either alarmist or breezy about this, because the raw-milk page argues at length that both camps oversimplify.
What’s low risk: hard, low-moisture, well-acidified, properly salted cheese aged for months. It is a hostile environment. This is most of what a home cheesemaker who follows a recipe will produce.
What carries real risk: high-moisture, low-acid, surface-ripened cheeses — the soft and bloomy end. That’s where Listeria is a genuine concern, and it’s why people who are pregnant, elderly, very young or immunocompromised are advised to avoid soft cheeses generally.
And what predicts risk is the cheese, not the slogan. Moisture, pH, salt and handling — not the raw-versus-pasteurised binary that the public argument is conducted in.
So: if you’re making soft cheeses to give away, or for anyone in those groups, that’s the point to be most careful and most conservative. A hard wheel for your own table is a different proposition.
The short version
Clean before you sanitise. Keep a spray bottle of no-rinse acid sanitiser made up. Never let it near anything chlorinated. Boil your cloth. Don’t let water stand in the cave. And be more careful with soft cheese than with hard.
