Ovens & Equipment

The oven does half the work of bread-making, and different ovens genuinely bake differently. Once you understand how yours behaves — how it heats, how dry it runs, how hot it really gets — you can get far more out of it, and you’ll know what to reach for when. I’ve baked on all of these, so here’s an honest rundown of gas vs. electric vs. commercial convection vs. a real pizza oven, plus the handful of tools that matter most.

The one-line summary I’d give a new baker: electric is the reliable, even, dry standard (just add steam); gas is a little more humid but less even; commercial convection is unbeatable for browning a lot of loaves at once but fights you on steam; and a deck or pizza oven is the dream for crust and spring if you get the chance to bake on one.

Why home ovens struggle — and how to fix it

A home oven has two disadvantages against a bakery’s: it isn’t hot enough, and it’s too dry. Both are fixable.

Not hot enough / no thermal mass. A bakery deck oven slams stored heat into the bottom of the loaf. At home you fake it with a baking stone or (better) a baking steel — a slab you preheat for a good 45 minutes so it’s loaded with heat, then bake right on. Steel conducts even harder than stone and gives the best home oven spring. And preheat longer and hotter than you think — most artisan loaves want 450–500°F, and the oven needs time to really get there, thermometer aside.

Too dry. This is the big one. Steam in the first 10–15 minutes keeps the crust soft long enough for the loaf to fully spring, then sets into a thin, crackly, glossy crust. Ways to get it at home, worst to best:

  • A pan of water or a spritz bottle — helps a little, but home ovens vent steam fast.
  • A preheated pan of lava rocks or a cast-iron skillet you pour boiling water into as the loaf goes in — better.
  • A Dutch oven — the champion. A heavy lidded pot, preheated screaming hot; the loaf’s own escaping moisture becomes a perfect steam chamber. Lid on ~20 minutes (steam + maximum spring), then lid off to brown. This single tool gets home bakers the closest to a deck-oven loaf, and it’s what I reach for on every artisan and sourdough bake.

Convection ovens are the exception: the fan actively works against steam, so for delicate high-rise loaves I either turn convection off for the steam phase or just bake them in the Dutch oven, which seals the fan out entirely.

Pizza — where the oven is the whole recipe

Pizza is the clearest case of the oven mattering more than anything. A great pizza is really about heat — the hotter and faster, the better the char, puff, and chew. A wood-fired or dedicated pizza oven at 700–900°F bakes a pie in 60–90 seconds. At home, the move is a baking steel preheated as hot as your oven will go (often 550°F), ideally under the broiler, to get as close to that as possible. Same lean, high-hydration dough you’d use for artisan bread; the oven does the rest.

The tools that actually matter

You don’t need much, but a few tools change everything:

  • A digital scale. The most important upgrade, by far. Baking is ratios (baker’s percentages — see Ingredients), and cups are wildly inconsistent for flour. Weigh, and your bread becomes repeatable overnight.
  • A lame (or a razor blade). For scoring — a plain razor on a handle. The clean, sharp cut a lame makes is what gives you a proper “ear”; a butter knife just drags.
  • A Dutch oven. The home baker’s steam chamber, as above.
  • A baking stone or steel. Thermal mass for oven spring and great pizza.
  • An instant-read thermometer. The honest test of doneness: most lean breads are done at an internal ~205–210°F, enriched loaves around 190–195°F. Stop guessing by color and knock.
  • A banneton (proofing basket). Supports a wet, round dough while it proofs and leaves that pretty floured spiral.
  • A bench scraper. For handling and dividing sticky dough — cheap and endlessly useful.

Know your own oven

The last and most useful tip: every oven lies. Get a cheap oven thermometer and find out what “450°F” really means in yours — most are off by 25°F or more, and many have a hot side. Learn your oven’s quirks (rotate for hot spots, preheat longer than the dial says), and your bread gets better without changing a single recipe. The oven is a tool like any other; the baker who knows their tool wins.
