Creamy grits studded with crisp bacon and fresh chives - smoky, savory, herby.
Ingredients
- 1 cup grits
- 2 cups water
- 2 cups milk
- 1 teaspoon salt
- 6 slices bacon, chopped
- 1 cup shredded cheddar
- 2 tablespoons butter
- 3 tablespoons chopped fresh chives
- Black pepper
Directions
- Cook the chopped bacon in a skillet until crisp; drain on paper towels, reserving 1 tablespoon drippings.
- Bring the water, milk, and salt to a boil, whisk in the grits, and simmer until thick and creamy.
- Stir in the butter, cheddar, the reserved drippings, and most of the bacon.
- Top with the remaining bacon and the chives; finish with black pepper.
Notes
Scallion greens work if you have no chives.
