Creamy grits studded with crisp bacon and fresh chives - smoky, savory, herby.

Ingredients

  • 1 cup grits
  • 2 cups water
  • 2 cups milk
  • 1 teaspoon salt
  • 6 slices bacon, chopped
  • 1 cup shredded cheddar
  • 2 tablespoons butter
  • 3 tablespoons chopped fresh chives
  • Black pepper

Directions

  1. Cook the chopped bacon in a skillet until crisp; drain on paper towels, reserving 1 tablespoon drippings.
  2. Bring the water, milk, and salt to a boil, whisk in the grits, and simmer until thick and creamy.
  3. Stir in the butter, cheddar, the reserved drippings, and most of the bacon.
  4. Top with the remaining bacon and the chives; finish with black pepper.

Notes

Scallion greens work if you have no chives.
