Baked Cod with Sweet Potato & Green Beans

Ingredients

  • 7 oz cod fillet
  • 1 medium sweet potato, cubed (½-inch pieces)
  • 2 cups green beans, trimmed
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Herbs: thyme, parsley (fresh or dried)
  • Salt, pepper

Directions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet.
  2. Toss sweet potato cubes with 1 tbsp olive oil, salt, and pepper. Spread on baking sheet.

Roast sweet potatoes 12 minutes.

  1. Push to one side. Add green beans (tossed with ½ tbsp olive oil) to another section.
  2. Place cod on remaining space. Season with garlic powder, paprika, salt, pepper, and herbs. Drizzle with remaining olive oil.
  3. Roast everything together 13–15 more minutes until fish flakes.

Notes

Sheet pan dinners = minimal cleanup. Everything on one pan. The cod is done when it turns from translucent to opaque white throughout and flakes easily. Sweet potato cubes should be fork-tender.
