Baked Ham Slices

Ingredients

  • Ham, bone-in — 55 pounds
  • or — as needed
  • Ham, boneless — 38 pounds

Directions

  1. Split ham into knuckle, inside, and outside sections. Cut these pieces into slices ½ to ¾ inch thick. Cut slices into servings weighing 6 to 9 ounces each.
  2. Place slices in baking pans. Roast, uncovered and without water, in slow oven (300° F.) 45 minutes or until tender.

SCALED TO 8 SERVINGS (the original is ÷12.5): Ham, bone-in — 4 lb 6⅓ oz or — to taste Ham, boneless — 3 lb ⅔ oz
