Brazil’s uniquely tropical take on stroganoff — richer and more savory than the original, served with rice and shoestring potatoes.
Ingredients
- 2 lbs boneless chicken breast, cut into strips
- 1 onion, diced
- 4 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup heavy cream or creme fraiche
- 1/2 cup ketchup
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1/2 lb mushrooms, sliced
- 2 tbsp olive oil
- Salt and pepper
Fresh parsley
- Cooked white rice and shoestring potato chips to serve
Directions
Season chicken with salt and pepper.
- Brown chicken in olive oil over high heat. Remove.
- Sauté onion and mushrooms until softened and golden.
Add garlic, cook 1 minute.
- Add tomatoes, ketchup, Worcestershire, and mustard. Simmer 5 minutes.
- Return chicken to pan. Add cream. Simmer 10 minutes.
Season with salt and pepper. Top with parsley.
- Serve over white rice with shoestring potato chips on top.
Notes
The ketchup is not a mistake — it’s authentic to Brazilian stroganoff and provides the distinctive sweetness. Shoestring potato chips as topping are traditional in Brazil.
