Ground chicken patties spiked with hot sauce and topped with a quick blue cheese dressing for all the flavor of buffalo wings on a bun.

Ingredients

  • 1 1/3 lbs ground chicken
  • 3 tablespoons hot sauce (such as Frank’s RedHot)
  • 3 ribs celery, finely chopped
  • 3 scallions, finely chopped
  • 1 tablespoon poultry seasoning

Salt and freshly ground black pepper, to taste

  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons butter, melted
  • 1/2 cup crumbled blue cheese
  • 1/2 cup sour cream
  • 1 tablespoon white wine vinegar
  • 4 crusty rolls or burger buns, split
  • Romaine lettuce leaves and tomato slices, for serving

Directions

  1. In a bowl, combine the ground chicken, 1 tablespoon hot sauce, half the celery, the scallions, poultry seasoning, salt, and pepper. Form into 4 patties.
  2. Heat the olive oil in a skillet over medium-high heat and cook the patties until browned and cooked through, 5 to 6 minutes per side.
  3. Stir together the melted butter and remaining 2 tablespoons hot sauce; brush over the cooked patties.
  4. Make the dressing: mash the blue cheese with the sour cream, vinegar, remaining celery, salt, and pepper.
  5. Build the burgers on the buns with lettuce, tomato, the buffalo patties, and a generous spoonful of blue cheese dressing.
