Buttery Sharp Cheddar Cheese Grits

Everyday cheese grits, stovetop and weeknight-fast, with a full cup of sharp cheddar melted in.

Ingredients

  • 1 cup quick grits
  • 2 cups water
  • 2 cups whole milk
  • 1 teaspoon salt
  • 3 tablespoons butter
  • 1 1/2 cups shredded sharp cheddar cheese
  • Black pepper to taste
  • Hot sauce, optional

Directions

  1. Bring the water, milk, and salt to a boil in a saucepan.
  2. Whisk in the grits, reduce the heat to low, and simmer 5 to 7 minutes, stirring often, until thick.
  3. Off the heat, stir in the butter and cheddar until melted and smooth.
  4. Season with black pepper and a few dashes of hot sauce if you like. Serve right away.

Notes

Use freshly grated cheese; pre-shredded has anti-caking starch that can make grits grainy.
