Chicken, Roulade with Ham and Asparagus

Ingredients

  • 6 Oz Chicken Breast
  • 2 Slices lo-cal deli ham
  • 2 Asparagus spears
  • 1.5 cherry tomatoes, quartered
  • 1 oz feta sliced long and thin
  • Salt
  • Pepper
  • Old Bay Seasoning

Directions

  1. Beat breasts flat. I put them in a gallon zip lock bag and use a rolling pin.
  2. Place ham over chicken breast then add the asparagus, tomatoes, and feta.
  3. Roll up and put them in a baking dish sprayed with vegaline garlic cooking spray (you can use a toothpick to hold them in place if needed). I also spray a bit of the vegaline on top for flavor and to hold the spices. I find when rolling these up, if I roll up everything in the ham first and then roll that in the chicken, it all stays together much better. Sprinkle with salt, pepper, and Old Bay.

Cover with foil and bake at 400 F for 30 minutes.

  1. Remove from oven, cover with foil and let rest 5 minutes.

Notes

I love roulades whether they are chicken, beef, or fish, they are all fantastic! Don’t know what a roulade is? It’s just a fancy French (can you say pretentious) way to say rolled up. I wanted this recipe to be low in calories but still have plenty of flavor; I think I did well.
