Ingredients
- Beans, chili, small — 8 pounds
- Meat, carcass — 35 pounds
- or — as needed
- Meat, ground — 25 pounds
- or — as needed
- Meat, cooked, ground — 18 pounds
- Garlic, crushed — 4 cloves
- Fat — 1 pound (½ No. 56 dipper)
- Pepper, chili, ground — 6 ounces
- Chili powder — 2 ounces (8 mess kit spoons)
- Salt — 6 ounces (¼ mess kit cup)
- Meat stock — 2 gallons (8 No. 56 dippers)
- Tomatoes — 1 No. 10 can
Directions
- Wash beans thoroughly. Cover with cold water; soak 8 hours.
- Cover and heat to boiling point; reduce heat and simmer 1½ hours or until tender but not split or mushy. Drain.
- Run ⅔ beans through food chopper and leave remainder whole.
- Cut meat into ½-inch cubes or run through coarse meat grinder.
- Cook crushed garlic in fat until brown; add meat and cook until brown. Add chili pepper, chili powder, salt, and enough meat stock to cover.
- Cover tightly and heat to boiling point; reduce heat and simmer until meat is tender. Add remainder of stock as needed.
- Mix ground beans, remaining whole beans, and tomatoes with meat.
- Serve very hot.
